Chocolate Nut Pie

This was very rich- but very good! My only gripe was the crust got soggy after the first day. Good recipe to make for a crowd- but doesn't keep well for leftovers.

Peppermint Brittle

Excellent recipe. I used the suggestions by others to first put a layer of semi-sweet chocolate then used the white chocolate (not a great fan of white chocolate--too sweet). The combo of the semi and white was perfect! One suggestion-I halved the recipe and when I went to smack the pan to break the brittle it didn't break so well. Maybe I should stick to the original recipe. P.S. My husband loved this and he hates white chocolate!

Easy Morning Glory Muffins

Mmmmm, these muffins are soo good. Packed with all my favorite ingredients. I followed the recipe exactly except I used less shredding carrots (I only had 1/2 cup). Still came out great. I wouldn't leave out anything, especially the coconut (I used sweetened). The only part I might change next time I bake these is the oil (1 cup-yikes!). I might try using 1/2 and subbing the rest with applesauce.

Bread Pudding II

I used a couple of suggestions and some flair of my own and it came out delicious! I used 3 eggs, 1/4 c sugar, 1/4 c brown sugar, 1 cup whipping cream , 1 cup low fat milk, 1/4 tsp nutmeg, and a mixture of raisin bread and pannetone. I drizzeled the melteded butter on top after adding the egg mixture. I also added a little brown sugar, 1/4 cup choc chips and 1/4 cup chopped walnuts to give it a nice topping. I think next time I will try different bread (maybe chocolate cherry bread).

Bacon Quiche Tarts

these tarts were scrumptious! i made a few modifications. i used red fat flakey biscuits (definately use half a biscuit for each muffin). i rolled each 1/2 into a ball then flattened with a rolling pin b/f placing in muffin cup. i also used turkey bacon and lite cream cheese. i also baked mine at 350 instead of 375 to prevent excess browning. i used swiss in mine and thought they were perfect! i wanted to eat more than one! great recipe, will def make again.

Chocolate Banana Bread Pudding

THIS RECIPE WAS GREAT!! WAS A LITTLE WORRIED WHEN IT CAME OUT OF THE OVEN A LITTLE RUNNY. ONCE IT WAS REFRIGERATED-MUCH BETTER. I USED EGG SUBSTITUTE, AND HOMEMADE BANANA NUT BREAD. I THINK NEXT TIME I'LL USE BREAD THAT'S EASILY ABSORBED AS PUDDING WAS TOO WET, EVEN WHEN BAKING FOR OVER AN HOUR
