A great fall recipe or for the holidays. I have some frozen in the fridge as I type. I love how easy it is and how well it bakes. Just lovely!

Excellent Shrimp Creole

Reviewed: Mar. 6, 2005
I reduced the servings and still had way too much sauce. Otherwise, this was quite tasty, but I may keep looking.

Chili Rellenos Casserole

Reviewed: Mar. 6, 2005
What a terrific recipe. I will make again and again. The only change would be to chop the green chilies rather than leaving them in whole pieces. Served this with tacos!

Peach Cobbler Dump Cake I

Reviewed: Mar. 6, 2005
Super easy and fast. I just love these dump cakes! I bought fresh out of season peaches and made a simple syrup. Tossed the sliced peaches in the syrup, added to the pan and continued with the recipe. What a delightful dessert for a Sunday supper!

Texas Sheet Cake III

Reviewed: Jan. 24, 2005
Words cannot describe this cake. I took the previous advice...cut cinnamon in half; added 1/2 c more flour. For extra special treat I used good Italian chocolate with 75% butterfat! This will be in my permanent repetoire. Thanks.

Butternut Squash with Onions and Pecans

Reviewed: Oct. 29, 2004
I make a similar recipe. Saute bacon pieces, remove bacon saving for garnish. Saute onion and squash in bacon fat. Use fresh sage over the parsley.

Creamy Hot Cocoa

Reviewed: Oct. 17, 2004
This recipe is from the Hershey's box with added sugar and half & half, that's all. Ironically, most cut the sugar to the same measurement as Hershey's. I must agree. I added 1/4 c of malted milk but will go with 1/2 c next time.

Really superb! Not a fish I use too often as it is too expensive, but when I do I enjoy a excellent recipe. This is easy and gives great flavor to the fish. I loved it and so did my husband.

Best of the Best Blueberry Muffins

Reviewed: Jun. 22, 2004
This one is a tough call. While the muffin has great flavor, full and rich, it is odd in how it bakes. I followed the recipe except increasing the baking powder to 2 1/2 tsp. I had loads of batter; too much for 12 muffins. But these went flat once it hit the heat. They did rise just a little. Once remove from the pan, they didn't hold their shape, kinda slumped over. The best part was that I had really huge blueberries, otherwise I have come across better recipes.

Lentil Soup III

Reviewed: Jan. 19, 2004
Lentil is the easiest bean soup to make and this is one I will continue to make! I sauteed some bacon and removed leaving the grease to saute the onion, carrot(added) and garlic. I added the remaining ingrediants along with some tumeric. After 35 minutes I used the boat motor to puree. Stirred in some chopped spinach. Topped with sour cream, bacon pieces and chives. Yummy!

Vinaigrette

Reviewed: Jan. 19, 2004
This is a good basic recipe. I cut the recipe in half. I used half safflower oil and half olive oil. I thought I could get away with half the sugar, but no, it needed nearly the entire amount.
