Split Pea Soup without Pork

Reviewed: Aug. 14, 2008
WOnderful recipe. I added onion (about half of one), chopped in the cuisinart along with the carrots and celery. Sauteed them in olive oil before adding to the peas. Sprinkled some pepper and garlic powder in and added maybe 1/2 cup of half and half towards the end. Soup needs to cook at least one hour to be thick enough but is really worth it! (Even my 1 yr old loved it!)

Best Ever Spinach Artichoke Dip

Reviewed: Jan. 10, 2008
This was really good! I love how easy it is to put together. I did think it needed a bit more zip and it DID have that canned taste to it but for a casual get-together, this is great. Thank you for sharing!

Mexican Corn on the Cob (Elote)

Reviewed: Jan. 10, 2008
After looking at theingredients for this recipe, I HAD to try it. I had a hard time imagining it being good, but I was pleasantly surprised! I think if I didn't know it was smothered in mayo, I would have enjoyed it better but even with that in mind, I did like it. My hubby and kids loved it! Just make sure you wipe your babes clean after dinner-- Thank you for sharing!

Porcupine Meatballs III

Reviewed: Jan. 9, 2008
Very good recipe. Along with other reviewers, I doubled the rice and baked meatballs in the oven. After 30mins at 350, I ladled sauce on top of the meatballs and cooked another 15mins. I also used half ground beef and half italian sausage-which did add to the baking time. I did make a few with just ground beef and the whole family agreed, the ones with sausage were far and away the best. I served these over egg noodles but do not recommend the tomato soup sauce as a gravy. I think good, homemade spaghetti sauce would be better, after they were baked with the original sauce. Thank you for sharing!

No-Fuss Rice Pudding

Reviewed: Oct. 26, 2007
Very quick and easy recipe. I cooked it on the stove as another reviewer suggested and added all ingredients at once. I would not recommend using a whole egg in place of the egg whites, though. You could see small bits of yellowed, practically scrambled eggs in it. So next time I will definitely follow the original instructions on that one. Other than that, add a tsp of vanilla and it's great!

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

Reviewed: Jun. 21, 2007
This was an absolutely stunning recipe! Melt in your mouth delicious filet mignon with a cream sauce worthy of this excellent cut of meat. The crab stuffing was wonderful, not too over powering at all. I noticed a lot of complaints about prep time and had a few suggestions. Start by chopping all the ingredients first (the garlic etc) and have that all laid out and ready to go. For measuring the whiskey, it's convenient to use a medicine measurement. You know, like the ones that come on Pepto Bismol bottles. I measured all tsp and tblsp along with ounces in that one cup and it worked out great. I would definitely start the sauce first. You don't need to mess with it and it can bubble along and reduse itself while you prepare the other parts. Cook the bacon for a couple mins in between paper towels in the microwave to minimize mess and effort. Next and while the bacon cooks, start the stuffing and then get the steaks cooked. Once those are done, your sauce will be ready for the final touches. Working in that order, this recipe took less than 40mins start to finish. 5 Stars and thank you so much for sharing!

Scalloped Potatoes

Reviewed: Jun. 21, 2007
This was a pretty good recipe, nice flavor and very simple to put together. I would suggest melting butter with cheese(s) and milk over the stove instead of the microwave. Microwave could cause splatter and the cheese to crust a little at the edges. I think this recipe would do well with some onions as well. Thanks for sharing!

Spiced Butternut Squash Soup

Reviewed: Jun. 14, 2007
Wow..and again, WOW! Beautiful, warm, full-flavored soup my family LOVED. I have made other butternut squash soups that were good but the leeks and potatoes in this one just sent those other recipes packing. This would make a wonderful addition to a Thanksgiving meal. Thank you for sharing!

Spinach-Gorganzola Salad

Reviewed: Jun. 14, 2007
Preparation for the salad was a bit too involved for the end result. It was a nice change from regular ho-hum salad but not as dazzling as I expected.

Herbed and Spiced Roasted Beef Tenderloin

Reviewed: Jun. 14, 2007
A nice idea to start with but a little plain for my taste. The end pieces and outer layer of the roast were very good but the bulk of the meat just tasted like...meat. If I were to make this again, I would mix the spices with a lot of olive oil and inject it in the meat before marinating overnight.

Green Bean and Mushroom Medley

Reviewed: Jun. 14, 2007
This dish was a fabulous compliment to any flavorful main course. Cooked in real, unsalted butter with minimal, if any, seasoning keeps it fresh and clean tasting. The only difference in the way I prepared it was to keep the green beans whole. Thanks for the recipe!

Buffalo Chicken Wings I

Reviewed: May 9, 2006
Easily the best wings you'll taste! I like to add about half a cup of sweet and smokey BBQ sauce (Sonny's is best, you can buy it Sam's) and a couple dashes of garlic powder for more of a robust flavor. Just perfect!

Grandma's Secret Pie Crust

Reviewed: Apr. 22, 2006
I usually find that "easier" pie crusts end up with the taste and texture of store bought crusts. This recipe does the trick though! It is so easy to put together, stays together when you roll it out super thin and flakes beautifully once baked. Thank you for sharing!

Best Marinara Sauce Yet

Reviewed: Feb. 10, 2006
This is a simple yet wonderful sauce anyone can make. Using quality stewed tomato products is the key to get rid of the acidic flavor you usually find with the cheaper brands of canned tomatoes. The longer you cook it, the better it tastes. HINT: This sauce is absolutely amazing and company-worthy if you use merlot instead of wine. Thanks for sharing!

Cajun Seafood Pasta

Reviewed: Feb. 10, 2006
I thought this recipe had too much of a fishy flavor. I would halve the cream and add a bit of cream cheese to neutralize the fish flavor a little. Thank you for sharing!

Shrimp and Portobello Mushroom Fettuccine

Reviewed: Feb. 10, 2006
This dish had an excellent flavor, I wanted to rate it 5 stars but it did need a little fixing. First, I used only half cream and half milk but it was WAY too thick. Next try I used milk and no cream and it was perfect. I balked at the lb of mushrooms, but it's a perfect amount. Also, just personal preference, I used half shrimp and half scallops. Exquisite! I would serve this for company.

Restaurant-Style Hashbrown Casserole

Reviewed: Aug. 3, 2005
I really enjoyed the flavor of this recipe and liked how simple and fast it was to prepare. It ended up greasy tasting and didn't hold it's form very well. I pan-fried it the next morning for breakfast in the hopes it might get crispy but it didn't work. I will use this recipe again to serve casually to my family (they loved the flavor) but wouldn't consider serving it to guests.
