Turkey and Quinoa Meatloaf
This recipe was a hit with my hubby who is a major meatloaf fan, but isn't too wild about turkey meatloaf. I made a few adjustments since I didn't have some of the ingredients. I used A-1 steak sauce and soy sauce in place of Worcestershire, ketchup instead of tomato paste, mixed the onion and garlic right in without cooking first, stuck with old fashion ketchup for topping since I didn't have brown sugar, and used 2 eggs. I even sent it for lunch with my 3 year old the next day. The container came back empty. My 2 year old on the other hand wouldn't touch it, but that's not saying much since he won't eat most things unless it's covered with breading.

Channa Masala (Chickpea Curry)
Made this dish for my family (5 adults, 2 kids, 1 toddler) and doubled the recipe. Everyone seemed to enjoy it so well that it really wasn't enough. If you're in to spicy Indian food you'll have to add it because this is quite mild. When asking around if everyone liked it I got a "yes", but the true test was from my brother. He has been to India and apparently it still has a bit to go in order to truly taste like the real thing, although he still gobbled it down without any complaint. Cooking and prep time is very reasonable and with a bit of hunting I was able to find all ingredients in my local Publix grocery store.

Chickpea Curry
I only had a bite of this, was instantly hooked, and made sure to have my friend send me the recipe. I will definitely be passing this one along to my brother too since he doesn't like to eat any meats other than seafood and is crazy about Indian spices.
