My favorite things to cook
I work evenings, so I'm always trying to find healthy but quick dishes to prepare that my family will love. I've been baking as long as I can remember, but I try to limit the amount that I do for waistline purposes.

Baking Christmas cookies, making corn custard on Thanksgiving
My cooking triumphs
I have pretty much mastered the art of fondue making, after many not so impressive attempts.
My cooking tragedies
I was baking a delicious dark chocolate cake for my husband and for some odd reason completely forgot to add the baking soda and baking powder. It was not very tasty, and awfully flat, I was so disappointed.

Easy Pancakes
Pretty good recipe, and I love that it uses ingredients that I always have. Definitely will make again.

Easy Cheesy Chicken Bake
I made this recipe as directed, only I used milk instead of water to mix with the soup. It was pretty good, although next time I'll probably use 1 more chicken breast half and sprinkle some shredded cheese on top when I add the broccoli. The potatoes cooked perfectly for me, I had sliced them very thin. My kids liked it, I'll make it again.

Gaye's Microwave Fudge
I grew up with this recipe, and I've always loved it. It's so easy to make, kids can definitely play a big part in it. I add 1 cup of creamy peanut butter to the recipe, it's delicious!!
