Simple Scones

These scones are absolutely fantastic!!! They are honestly better than anything you can buy in a bakery. I made them for a Christmas brunch and added dried cranberries. My son doesn't like scones because they are dry but these have a little moisture in them that makes them taste so great. You can make extras and freeze them. The only thing I did differently was to cut the scones in half. Instead of 8 scones, I had 16. Most people seem to prefer the option of the smaller size and eating more if they want.

Unbelievably Awesome Barbeque Chicken Pizza

Carrot Souffle

This recipe is delicious but I rated it with only four stars because it's too sweet. I cut the sugar in half based on the other reviewers but I think I could've cut it further. Next time I'm going to try using 2 tablespoons of sugar instead and see how it tastes. I also used an immersion blender to get a better consistency.

Chicken Parmesan

This recipe is amazing!!! I made it exactly as is and the whole time I was cooking my 18 year old kept telling me he hates chicken parmigiana. Ok - so he's OFTEN wrong and I'm often right, but this win was especially awesome. HE LOVED IT!!! He said it was restaurant quality. My husband went back for seconds. This is a fantastic recipe that will win you a lot of fans.

Lemon Chicken Piccata

This recipe is restaurant quality. Absolutely delicious. I doubled the sauce part of the recipe and I would make a few changes for next time. I'm going to try half the butter and half the lemon juice. It really seemed like I didn't need so much butter which would definitely cut the calories. It was very lemony, which I really like, but I think it could be toned down just a bit.

Easy, Sweet Cornbread Muffins

These muffins were so great and so easy. I have made them just by the Jiffy directions and they were so dry. This recipe fixed the problem and made them fabulous. Thank you!!!

Boilermaker Tailgate Chili

This chili is amazing. I made it for a party that a friend and I were throwing. She made a Barefoot Contessa chicken chili and I made this one. Everyone preferred the Boilermaker chili and my friend asked for the recipe :) I made a few changes so it wouldn't be too spicy for a big crowd which worked perfectly - 3 Tablespoons of chili powder, no Tabasco (I figured people could add it after the fact if they wanted more spice) and no chili peppers. I also decided to use 3 lbs of beef chuck and no sausage. I just like the consistency better. I served the chili in a buffet with things they could add in - avocado slices, sliced jalapenos, sour cream, shredded cheese and diced onions. We had chili left over and ate it the next day. It was even better so I suggest making a day ahead.

Slow Cooker Butter Chicken

I had been dying to make this and had a serious challenge finding all the ingredients. I went to several supermarkets and no luck. Finally I searched out a store that carried Indian spices. The spices alone were $17. It was an easy enough recipe but the taste was so so. Everyone ate it but no one wanted the left overs. In fairness to the recipe, we rarely eat Indian food but my husband loves curry dishes and felt this was very average.

Chicken Pot Pie IX

This is so delicious. My family absolutely loved it - even my picky eater. I was worried about one pie feeding 4 people but there was plenty for my husband, two teenage boys and me with some left over.
