Mushy Peas I

Reviewed: May 17, 2008
Wow these are so good! And simple. I used fat-free half and half and they turned out perfectly. I made these with grilled brats and garlic mashed potatoes for Bangers and Mash. Thanks!

Ham and Beans

Reviewed: Aug. 21, 2009
These are fantastic! I'm from Arkansas and never made ham and beans before. I love finding good simple recipes that don't need embellishment and this is one of them. I used 1/3 cup brown sugar after reading reviews. I'll try it with just 1/4 cup next time. And I took a suggestion and added 1/2 teaspoon of baking soda to get rid of the gassiness. Next time, I'll also cook them uncovered. I had too much water left when they were done, but I drained it off and they were still fantastic. I served this dish with mustard greens, cornbread and black-eyed peas. This is a wonderful southern staple!

Excellent and Healthy Cornbread

Reviewed: Aug. 21, 2009
Fantastic! Very easy and very tasty. I was worried about it not tasting much like regular cornbread since it's got yogurt in it, but it's great! And moist and chewy. Goes really well with the Ham and Beans recipe. Thanks very much!

Honey Coconut Salmon

Reviewed: Oct. 21, 2009
This is tasty! The best parts are the edges where the sugars have caramelized. I cut the butter down to 1/2 stick (4 tablespoons), used 1/2 cup of honey, and didn't change the other ingredients. I'm making it that way from now on. Hubby loved it. I served it with coconut jasmine rice and steamed green beans.

Curried Cauliflower Soup

Reviewed: Jan. 9, 2010
This is a fantastic vegan soup! I left out the onion and used a pinch of garlic powder since I was out of fresh garlic. It did need a bit more seasoning, so I added a pinch of ground cardamom, about 1/2 teaspoon of ground coriander and about a teaspoon of ground turmeric. Perfect! Hubby loved it. This is a very good base recipe.

Pork Chops with Country Gravy

Reviewed: Jan. 18, 2010
The gravy was SO good. I served the pork chops with mashed cauliflower (prepared like mashed potatoes) and baked beans made from scratch. This recipe's easy and so good. I think I'll leave the out thyme next time but other than that, it's awesome.

Cherry Pie IV

Reviewed: Apr. 5, 2010
This pie filling is awesome! I can't speak for the crust because we used my mom's recipe. I made this pie for Easter and wasn't able to find fresh cherries anywhere. I substituted 3 cans of tart cherries packed in water, and also added the juice from about 1/2 a lemon. It was fantastic and everyone loved it!

Pecan Pie V

Reviewed: Oct. 23, 2006
THANK YOU SO MUCH FOR THIS RECIPE! I LOVE pecan pie but corn syrup is so bad for you so I've been very leary about making/eating it. I stumbled across this recipe and made it last night. It came out perfectly! The only thing I would change is to add a pinch or two of salt. Other than that, it's perfection. I promise you'll never miss the corn syrup.

Old Fashioned Pineapple Upside-Down Cake

Reviewed: Apr. 18, 2010
This cake is awesome! My husband had a craving for pineapple upside-down cake, so I whipped this one up. He said this cake is the best looking and best tasting pineapple upside-down cake he's ever had! I followed some suggestions and added 1/4 cup of pineapple juice to the batter. I think I'll use 1/3 cup next time for a little extra moisture, but it still tastes perfect. The best part is the caramel-y topping. Fabulous recipe!

Maple Salmon

5 stars. Not too sweet either. I doubled the marinade (since I used two large salmon steaks), added an extra clove of garlic, and left out the garlic salt. Boyfriend gave it 2 thumbs up. This one's a keeper.
