Pasta with Tuna, Sun-Dried Tomatoes, Artichoke Hearts, Lemon, and White Wine

I had high hopes for this recipe. All of the ingredients sounded so good together, but it just didn't seem to really come together. There's too much liquid for one thing. Maybe if it was saucier it would have helped. I added garlic and I think adding A LOT of Parmesan would have tied the dish together, but for the cost of the fish and how sour the whole dish is, it's just not really worth it. It's too acidic. Sorry...Probably won't make this again.

Marinated Flank Steak

This marinade is AWESOME if you have the time. I put the steaks in the marinade in the morning before going to work so they ended up marinating for like 8 hours. And my husband ended up over cooking them, so they were tough, but still amazingly tasty. I did cut the oil in half to cut back on fat, but other than that, I wouldn't change a thing. I'm keeping this recipe indefinitely. I've also made fajitas with this steak and they were AWESOME!

The Best Steamed Asparagus

This was ok, but it was bland and almost raw. It could stand to cook a few minutes more. It also might help if the dish was tightly wrapped, not loosely.

Kheer (Rice Pudding)

This rice pudding is awesome! I think it could use a tad more sugar. I did have rose water on had (finally got to use it!) and I went ahead and stirred the almonds into the pudding, and skipped on the pistachios. I cooked it a little longer than directed because the rice didn't seem to get tender in time. If you're concerned about the fat, using light coconut milk and 2% or skim milk will cut a lot of the fat out. It still tastes amazing! Thanks for the great recipe!

Chicken Makhani (Indian Butter Chicken)

I was not crazy about this...It sounded so good with that many spices going into it, but it actually turned out to be kinda bland. I doubled up on the spices, but that didn't hide the fact that the yogurt and half & half were curdled from all the acidity in the dish. Probably won't make again...

Broccoli Quiche with Mashed Potato Crust

This quiche is wonderful. I prefer the potato crust to a regular pie crust. Much more like comfort food. I have made some changes though. Instead of black pepper I used white. I also added about 1/4 t garlic powder, and sharp cheddar, and next time, I'm leaving out the nutmeg. It didn't seem to fit with the dish. This quiche is more comfort food, less savory food. Thanks for the keeper!

Cinnamon Rolls I

Great recipe. It takes some effort, but they're very good. I added finely chopped pecans when spreading the dough with the butter, cinnamon, and sugar. They did get a little overdone. I think next time I'll bake them at 350 instead of 400. Thanks for the keeper!

Chicken Curry Potato Soup

This is a decent base recipe, but I did make several tweaks. First, this soup needs some salt. I also added an extra 1/2 t curry and a tablespoon or so of fresh grated ginger. I think next time, I'll also add some lime juice (didn't have any on hand this time). It's good, but it needs a little kick of something.

Ginger Steak

Pretty tasty. Next time, I think I'll cut the salt down to 1/4 t. I used the sauce as a marinade for 2 steaks, and I cooked them in a skillet. They were very juicy and tasty. It's a keeper!

Maple Cookies

I'm going with other ratings...Could not taste the maple. I kinda feel like it's a waste of expensive maple syrup. If I make these cookies again, I'm definitely going to try using the 2 t maple flavoring and maybe adding some chopped walnuts. Sorry. It sounded really good...

Artichoke Mashed Potatoes

These are awesome! Mom and I made these for Thanksgiving and everyone raved about them. We doubled the recipe, boiled a few cloves of garlic with the potatoes and mashed them together, made them a little creamier with half and half, and added 1/2 c - 1 c Parmesan cheese. It was amazing!

Thai Curry Soup

This is very good with firm tofu. I used 3 cloves of garlic, 1 tablespoon of grated ginger, 3 oz shiitake mushrooms, and about 6 oz spinach. Since I wasn't able to find yellow curry paste, I used curry powder and tweaked the spices until it tasted right. Also good with rice instead of noodles (both are good). This is a new favorite of ours. Thanks!!

Pumpkin Cheesecake Bars

These are great! I love the flavor and creaminess. I used parchment paper instead of cooking spray and had no problems. I did have a hard time getting the crust to thin out evenly in the jelly roll pan. I think next time I will try the 9x13 method. Thanks!

Quick Chili II

4 1/2 stars. This is how red chili should taste. I used a can of dark kidney beans and a can of light kidney beans instead of the ranch-style. I also added a small can of corn. I served it with cheddar cheese and sour cream and it was awesome. Thanks for the great recipe!

Perfect Pumpkin Pie

This is awesome. I did add a splash of vanilla and a dash of ground cloves and allspice. I also used a deep dish pie crust. The consistency was perfect. Thanks for the keeper!
