Excellent and Healthy Cornbread

Fantastic! Very easy and very tasty. I was worried about it not tasting much like regular cornbread since it's got yogurt in it, but it's great! And moist and chewy. Goes really well with the Ham and Beans recipe. Thanks very much!

Ham and Beans

These are fantastic! I'm from Arkansas and never made ham and beans before. I love finding good simple recipes that don't need embellishment and this is one of them. I used 1/3 cup brown sugar after reading reviews. I'll try it with just 1/4 cup next time. And I took a suggestion and added 1/2 teaspoon of baking soda to get rid of the gassiness. Next time, I'll also cook them uncovered. I had too much water left when they were done, but I drained it off and they were still fantastic. I served this dish with mustard greens, cornbread and black-eyed peas. This is a wonderful southern staple!

Greens with Cannellini Beans and Pancetta

Awesome! My husband INHALED this! He said it reminded him of his grandma's cooking (she's very southern and used to make him collard greens, white beans and ham). I couldn't find beet greens, so I used 2 bunches of kale. I also used 5 slices of pancetta since I can only find the paper-thin stuff. I also added some fresh ground pepper. Excellent for a light and healthy dinner. Thanks very much!

This is good. And SPICY! I cut way back on the pepper, but there's still so much other spice that it'll slap you in the face! I added a little extra garlic, some curry powder, and used fingerling potatoes since I couldn't find Yukon gold for some reason. I served it with coconut basmati rice and chai. Thanks for the keeper! I didn't even realize it was vegan. =)

Jicama and Melon Salad

This is awesome! I did make a few changes though. I made this as a vegetarian meal and substituted cantelope for the honeydew, added a little extra honey, and added 1/2 cup of strawberries. It was excellent. Highly recommended.

Molasses Cookies

I'm not big on spiced cookies or cakes, but I had a craving for these when I saw the recipe. I think my mom or grandma made these when I was a kid and these taste exactly like the ones I had back then. These are not too gingery, just right. They spread out pretty thin when they bake but the molasses keeps them moist. Higly recommended!

Chicken Enchiladas I

I hated enchiladas until I made this. These are awesome! I may try using enchilada sauce instead of taco sauce next time...It seemed too thin. I also added some black beans, corn and fresh cilantro to the chicken mixture.

Authentic Hungarian Goulash

This was good. I guess I wasn't expecting a stew. I tried subbing a cup of beef stock for one of the cups of water and I think I caused it to taste more like pot roast than paprika. And I used Spanish smoked paprika so it's a shame that the beef taste overpowered it. This is a good winter recipe.

Baked Ziti III

This was my first baked ziti and the recipe is very good, but I felt that some of the measurements are off. I think 2 (24 oz) jars of sauce are plenty. 56 oz is a lot of sauce. Also, there is no way that all of that pasta and sauce would fit in a 2 qt baking dish. I used a deep 9x13 dish and everything just barely fit. I thought the sour cream was very good and is a little easier to spread instead of ricotta. I also added some frozen chopped spinach, chopped mushrooms and garlic to the sauce. This would also be awesome with Italian sausage. Very tasty! Thanks a lot!

Coconut Curried Tofu with Green Beans and Coconut Rice

This is a good base recipe, but I had to make a lot of changes. I doubled it, added 2 tablespoons of sugar to the rice and coconut milk, used a tablespoon of butter, sauteed the tofu with the curry powder, and added garlic, ginger paste, salt and a little sugar to the sauce. I also used light coconut milk, steamed the green beans before adding, and added some baby corn. It turned out to be fantastic. I'm definitely making this again.

Lamb and Potato Skillet

This is very good. These are the changes I made: I used extra lean ground beef, olive oil, 3 cloves of garlic, 2 teaspoons dried dill, and 8 oz tomato sauce. This recipe's fairly versatile. It was very healthy with the meat to veggie ratio and it's very tasty. Thanks for the great recipe!

Pasta with Tuna, Sun-Dried Tomatoes, Artichoke Hearts, Lemon, and White Wine

I had high hopes for this recipe. All of the ingredients sounded so good together, but it just didn't seem to really come together. There's too much liquid for one thing. Maybe if it was saucier it would have helped. I added garlic and I think adding A LOT of Parmesan would have tied the dish together, but for the cost of the fish and how sour the whole dish is, it's just not really worth it. It's too acidic. Sorry...Probably won't make this again.

Marinated Flank Steak

This marinade is AWESOME if you have the time. I put the steaks in the marinade in the morning before going to work so they ended up marinating for like 8 hours. And my husband ended up over cooking them, so they were tough, but still amazingly tasty. I did cut the oil in half to cut back on fat, but other than that, I wouldn't change a thing. I'm keeping this recipe indefinitely. I've also made fajitas with this steak and they were AWESOME!
