Cheesy Polenta

This was good but was a little lacking. I added a lot of milk after it finished cooking because it wasn't creamy like I had hoped. And even though I used sharp cheddar, there wasn't a whole lot of flavor, so I added a good pinch of garlic powder. It's a good base recipe, though.

Cherry Pie IV

This pie filling is awesome! I can't speak for the crust because we used my mom's recipe. I made this pie for Easter and wasn't able to find fresh cherries anywhere. I substituted 3 cans of tart cherries packed in water, and also added the juice from about 1/2 a lemon. It was fantastic and everyone loved it!

No Bake Bumpy Peanut Butter Nuggets

These are interesting. I forgot to buy coconut, sadly, so I just added more oats and they were pretty good. I think I'll try replacing the apple juice with honey, also. They were good, but not quite sweet eough for me. Thanks for a healthy snack recipe! It's nice to eat a dessert that you don't have to feel guilty about.

BBQ Pie

This is so tasty, very easy to make, and cheap! I've always liked baked beans and cheddar cheese together, so this was instantly appealing to me. I did make some changes...I used 1 lb of lean ground beef, 2 (22 oz) cans of Bush Bourbon and Brown Sugar Grillin Beans, added a pinch of cayenne pepper, and used Sweet Baby Ray brown sugar bbq sauce. I only had 1/2 cup of bbq sauce, but it still tasted great. I really liked the ratio of beef to beans that I used...1 1/2 lbs of meat and smaller cans of beans just didn't seem too balanced. And I liked the crust, but I think I'll definitely try the cornbread crust next time. Thanks for the keeper! This is a good base recipe.

Pork Chops with Country Gravy

The gravy was SO good. I served the pork chops with mashed cauliflower (prepared like mashed potatoes) and baked beans made from scratch. This recipe's easy and so good. I think I'll leave the out thyme next time but other than that, it's awesome.

Curried Cauliflower Soup

This is a fantastic vegan soup! I left out the onion and used a pinch of garlic powder since I was out of fresh garlic. It did need a bit more seasoning, so I added a pinch of ground cardamom, about 1/2 teaspoon of ground coriander and about a teaspoon of ground turmeric. Perfect! Hubby loved it. This is a very good base recipe.

Slow Cooker Thai Peanut Pork

This is great! I made a couple of changes...I didn't have time to cook it on low for 8-9 hours, so I cooked it on low for about an hour, and then cooked on high for 4. It turned out wonderfully. Near the end of cooking, I threw in some sliced shiitake mushrooms, took the pork out, and let the mushrooms cook down in the sauce. I think next time, I'm going to add a little sugar for a little sweetness, and I'm going to try to find some low-sodium teriyaki sauce...it was really salty. I served the pork with jasmine rice (that I cooked with 2 tablespoons of sugar to 1 cup of rice to counter the saltiness) and shelled edamame. I think this is the best thing that's ever come out of my slow cooker. I also recommend using a slow cooker liner for less mess. Definitely a keeper!

This sounds so good, but I was really disappointed at the fact that it had so many good tasting ingredients but such a lack of flavor. I don't understand how this turned out to be so bland, and I don't think I'll make it again.

Split Pea and Ham Soup I

This was pretty good. I added 1/2 teaspoon ground mustard for extra flavor. You know how you can add baking soda to beans while their cooking to cut down the gassiness? Yeah, DON'T DO THAT WITH THIS RECIPE. It didn't really change the flavor, it just made a huge mess on my stove because it caused it to keep boiling over. Other than the mess, it was good. It would make a good winter soup.

Drunken Winter Stew

This was very tasty. I was craving some soup with cabbage and this recipe hit the spot. I used great Northern beans instead of kidney beans, but I think it would be just as good with kidney beans. I used a bottle of Newcastle Brown beer, and I added the Dijon mustard, but it was still kind of bland so I added about 2 tablespoons of pretty strong horseradish mustard, and that gave it a little kick. I also added another teaspoon of garlic powder. This is a good winter soup recipe. Thanks!

Hungarian Goulash II

This would have been good but it was so salty that I almost couldn't eat it! I will try making it again, because aside from the saltiness, it tasted pretty good. But next time, I'm omitting the salt and will probably add more sugar and use tomato sauce instead of ketchup. It wasn't very saucy and turned out a bit dry...

Honey Coconut Salmon

This is tasty! The best parts are the edges where the sugars have caramelized. I cut the butter down to 1/2 stick (4 tablespoons), used 1/2 cup of honey, and didn't change the other ingredients. I'm making it that way from now on. Hubby loved it. I served it with coconut jasmine rice and steamed green beans.

This is pretty good. It's not something I would like to eat very often, though. I made it for dinner and then had leftovers for lunch and I got tired of eating it. I added some ginger and cinnamon to brighten the flavor a bit.
