Pretty tasty! I used 3/4 cup sugar and a TBSP coconut milk, and reduced the butter to 2 TBSP.

I made this as described, wasn't really a fan-it was OK. I did not have fresh sage so maybe that was the difference.

Cottage Cheese Chicken Enchiladas

Tasty-good alternative to the heavy cheese in a standard enchilada. I added a can of black beans to the chicken and used low fat cottage cheese and sour cream. Also flour tortillas becasue that's what I had. For sauce I use Emril's recipe as a steandard.

Sesame Pasta Chicken Salad

Really tasty-I lowered the oil and added some fresh veggies and water chestnuts for a party at my neighbors. It made a lot-they ate the left overs for breakfast the next day and reported it was the best pasta saled ever! It was good the first day-I guess really good the 2nd, I got an empty bowl back!

Banana Crumb Muffins

These just came out of the oven--boy are they going to be good! I followed the suggestions of canola oil, vanilla, nutmeg and cinnamon. I adjusted the recipe to make 15 and ended up with 12 large and 12 mini muffins. Added some walnuts to 1/2 the large ones before adding the toping. The real test will be to see how the are after a couple of days--if they last that long.

Spinach Brownies

Pretty tasty! I halved the recipe becasue there were just 3 of us and used an 8x8. It seemed a litte low on liquid so I used 2 eggs and bit more milk. Following others advice I added same onion and garlic sauted in a little butter, and skipped the rest of the butter. I also used fresh chopped spinach (rather than cooking first) and mixed a little fontina cheese with the mozz. I would make again, but bake lower than 375 to get a little less browning.

Curried Hummus

Making this for the second time, it was a big hit, did the water by sight versus measurement the first time. I like that it give a low fat option with healthy EVOO versus tahini which isn't the best. I might add a little toasted sesame oil this time to change it up a little!

Eggplant Croquettes

Really like this recipe. I reduced the egg like others suggested, and steamed the eggplants. They were small thin style so there were very few seeds. I formed patties and baked on a oven stone with a little spritz of olive oil versus frying, and used a blend of monteray jack and cheddar cheese. These freeze great and are easy to grab with an english muffin for a quick meal! Will make again and again!

Butternut Squash Bisque

So glad I searched for more soup options as this was fabulous! I reduced the butter and oil in 1/2 and used leeks and shallots since I had them instead of onions. Also used a small butternut and small acorn since that's what the CSA brought this week! Finally I roasted the squash for 40 minutes, and didn't need the cream to have it be 'creamy'. For spices I added a 'shake' of nutmeg and a couple of shakes of chili powder-mainly for color and a little zip. Not a lot of changes, mainly for what I had on hand! Can't wait to have more of it!
