Easy and Elegant Pork Tenderloin
This was my first time cooking pork tenderloin, and it was a success! I read the other reviews and followed some of the suggesions. I rubbed the tenderloin with a little bit of olive oil. Then I sprinkled both sides with garlic powder, onion powder, italian seasoning, black pepper and Mrs. Dash. I put some seasoned breadcrumbs in a bag and put the tenderloin in the bag. I shook until the tenderloin was coated. It was nowhere near as thick a coating as in the original recipe. I baked for 35 minutes and had no problems with burning breadcrumbs. Delish!!

Lemon-Pepper Salmon
I enjoyed this recipe. It was really quick and simple. It was my first time cooking fish, and this was an easy and delicious introduction. I cooked rice instead of cous cous and served with sauteed spinach. I did remove the seeds before chopping my tomatoes. Next time, I will probably use a cup and a half of tomatoes. They were really good!

Denise's Peanut Chicken
I really liked this recipe. I followed some reviewers' comments and used peanut butter. I used 3/4 cup, but 1/2 would have been plenty. I didn't have any sugar on hand, so I used a little honey. That was fine. I omitted the cornstarch. The sauce was still thick enough. I reduced the cayenne pepper a lot because my boyfriend doesn't like spicy food. He didn't like this recipe at all, in fact. He didn't finish his serving. I think he couldn't get the concept of peanut butter and chicken. Oh well! I'll cook this again for myself!
