Double Tomato Bruschetta

My friends and I loved this. I put the mozzarella cheese on the slices of bread and melted it in the oven for about 8 minutes. I put the tomato mixture on it after I took it out of the oven. I used only about 1/8 cup or more of oil, but that was still too much. Even my sister who doesn't like cheese asked me to make more.

Ali's Amazing Bruschetta

This was okay. I didn't have fresh oregano, so I used dried oregano. I didn't have fresh basil either, so I omitted that. The onion and garlic (which I added) was a little overpowering. I would put parmesan cheese on the slices of bread and melt it in the oven, then put the tomato mixture on it after. Most of my friends preferred the Double Tomato Bruschetta (from this site) to this.

Chocolate Eclair Dessert

I don't think there was anything special with this recipe. Maybe it would've tasted differently if it was one of the first things I had eaten rather one of the last. I crushed the graham crackers with my hands. I made the chocolate frosting recipe submitted by Bayschick (arrange by most helpful). My advice is to double the frosting recipe. I also forgot to put the whipped frosting in with the vanilla pudding mix. So, I just had people put a scoop of it onto their pieces. My friends liked it a lot.

Chocolate Lovers' Favorite Cake

I'm not crazy about chocolate, but this was delicious. All of my friends were impressed. I used 1/2 tsp vanilla extract and 1/2 tsp almond extract. I didn't have any more batter after filling it up to 1.5" from the top. It didn't overflow. I baked it for about 55 minutes and left it in the oven for about another hour or two just b/c I didn't have space to put it elsewhere. Thanks for the recipe!

Florentine Artichoke Dip

I used 1 head of fresh artichoke. I boiled it then chopped it up. I used lime juice since that was all I had. And I forgot to add in the Parmesan cheese, so I added it after I finished baking it. It was still good. Since I already had something baking in the oven at 400F, I put the covered pan on the middle rack and baked 15 minutes covered and another 5 minutes uncovered. My friends loved it. One of my friends said that it was better than the artichoke spinach dip from California Pizza Kitchen, which was her favorite at the time. It disappeared pretty quickly. We ate these with tortilla chips.

Iced Pumpkin Cookies

I hate giving ratings of less than 5, but this cookie recipe did not impress me all that much. Like some other reviewers, I found this to be too cake-like. The taste was okay. The only change I made was reducing the cloves from 1/2 tsp to 1/4 tsp since I don't like cloves. The cake-y/muffin-y texture made it seem undercooked. Also, the icing was too sugary, and I couldn't get it to drizzle even after adding more milk. I'm almost never impressed w/ high-rated recipes, maybe b/c I have such high expectations for the recipe after reading the reviews. I don't think I'll be trying this recipe again.

Golden Sweet Cornbread

The picture makes the cornbread look nice and soft. Mine wasn't. Oh well, it tasted pretty good. My mom liked it. It'd be a good idea to take the butter out of your refrigerate when you start baking the cornbread. Then, spread the butter on the cornbread while it's hot out of the oven so it will melt. I would make just enough for one meal. If you leave it for the next day, it gets hard. I'll probably make this again.

California Grilled Veggie Sandwich

This was a pretty good recipe. I love sandwiches. I couldn't find the charcoal for my charcoal grill, so I just baked the vegetables in the oven. I should have put the harder vegetables in first. It was kind of messy to eat b/c the vegetables kept falling off. I will be making this recipe again.

Best Brownies

I put my pot on high heat for a bit too long, so when I put the butter in, it turned into a brownish liquid. I was afraid I screwed up the entire recipe. Then I added the other ingredients. When I poured the mixture into the pan, I realized that my pan was too large (9x13). I baked it for about 15 minutes. It came out great. I blended granulated sugar in the blender to make confectioners' sugar. At first when I was stirring the frosting, it seemed too powdery to be frosting, but I kept on mixing, and it got a spreadable texture. The frosting did not get a smooth, creamy texture b/c of the sugar, but it was still good and rich. The brownie by itself wasn't much, but with the frosting, it's a good treat to indulge in.

Banana Crumb Muffins

Like someone else said, this was a lot like banana cake except not as dense. I followed the recipe exactly the first time. The second time, I ran out of white sugar. So I used about 1/2 cup white sugar and 1/4 cup brown sugar instead. It was just as delicious. My family keeps asking me to make more. Thanks for the recipe.

Autumn Cheesecake

Yum. I followed the recipe exactly. Well, except I used low-fat cream cheese, and I baked the cheesecake for an extra hour on accident. The topping was dark brown and burnt looking, but it didn't taste burnt at all! I used Golden Delicious apples. It smelled just wonderful when coming out of the oven. After I took it out of the oven, I let it cool. As soon as it cooled, I put it in the freezer for about an hour, and it was just the right temperature. My family loved it. I will be making this again and again.

Chantal's New York Cheesecake

I've never been a huge fan of cheesecake. I made it for my brother's birthday, and I think it turned out pretty darn good for my first time making cheesecake. I will have to find a better recipe for the crust (maybe it depends on the type/brand of graham crackers that you buy). I will use less flour next time. I think it might be missing something though. I had high expectations for it after reading all the good reviews. I'll have to experiment a little more with this recipe. I used a water bath, and it ruined my aluminum pan. I wrapped the bottom in 2 sheets of foil, but water still seeped in. Use an oven bag! I didn't get any cracks. There's a page with advice about making cheesecakes on this site. Read it! I didn't open the oven at all until maybe 4 hours later. I used low-fat cream cheese, and it turned out just fine. I was very pleased with this recipe.

Awesome Carrot Cake with Cream Cheese Frosting

I never had carrot cake before, but I made it for a friend's birthday. It was pretty good. My friend liked it. I used granulated sugar for the frosting. I think it would've been better if I had used confectioners' sugar. I'll try it again. The thing is that when I mixed all the ingredients, it was still very, very liquid-y(?). I added as much flour as needed to make it more dough-y. It turned out fine. You can definitely cut back on the oil. I think I used about 1/2 cup of oil. Give this recipe a try!

Spicy Garlic Lime Chicken

My oldest sister made this for my other sister and me. Since I'm a vegetarian, she used about 2 servings of macaroni pasta instead of the chicken. Wow! It was sooo good! It didn't turn out as great when I tried it, but it was still good. I'll be making a lot of this in the future. What a wonderful combination of spices. Thanks for the recipe!

Award Winning Soft Chocolate Chip Cookies

DELICIOUS! I tried both vanilla and chocolate pudding. For some reason, when I used the vanilla pudding, my cookies got really big, and it basically turned into one huge rectangular cookie. I prefer the chocolate pudding though. The cookies taste a bit artificial (like, not cookie-ish), but that's not such a bad thing. These cookies were fabulous. (Not for people on diets). My friends and family loved them. Thanks for the recipe!

Roasted Vegetables

Yum! This was really good. It smelled wonderful coming out of the oven. I used the potatoes I already had (Russet, I think). I think you'll be fine if you decrease the amount of oil a just a bit. Also, use fresh thyme and rosemary if you can. The only thing is that peeling and chopping all the ingredients takes a very long time. It's all worth it though.

Brown Rice, Broccoli, Cheese and Walnut Surprise

This dish had a different taste. It was good, but I got full after a few bites. I used reg. brown rice. I doubled the recipe, so I cooked 2 cups of rice in 4 cups of vegetable broth. Next time, I will steam the broccoli. The cheese was delicious when it melted on the hot rice. But I think I will gain weight from eating this. Oh well, who cares? Try this recipe!

Garden Veggie Pizza Squares

This was delicious! I didn't have green bell peppers, so I left those out. I was in a hurry when I was making these, so instead of refrigerating them for one hour, I put them in the freezer for about 30 minutes, and they came out very good. Thanks for the recipe! I'm making more tonight.
