Leek Tomato Dish

I went to the farmer's market the other day and happened to buy both leeks and tomatoes, so decided to try this. It is really good. Flavorful and so, so easy!!! AS was mentioned, some liquid does accumulate at the bottom..so just serve with a slotted spoon. Also, I was out of sage and thyme, so I just used Italian seasoning...and it tasted great! will definitely make again and again. In fact...I think I'll go back to the farmer's market tomorrow and get some more tomatoes and more leeks :o)

Cashew Raisin Rice Pilaf

This is a really, really good dish...very tasty and versatile. I think you could adapt it a number of ways. I didn't have cashews or raisins on hand...so I used dried cranberries and toasted pecans, and omitted the pimento. Everyone loved it!

All-Around Good Smoothie

This is a great basic recipe that is especially good for people who tend to skip breakfast. I'm not a morning person..and rarely eat breakfast. But I've been making these every morning. I pour them in a travel cup and drink them on my way to work. The very best thing about these smoothies is that they keep you very satisfied. After having one of these in the morning, I don't feel hungry for at least 4 hours! I usually substitute orange juice for the milk and then skip the honey..and they're still quite delicious! A few tips...you can use whatever type of fruit that you have and cut it up and put it in a freezer bag to save yourself a few minutes of prep time in the morning. also, if you find that you don't like the texture of the ground flax seed..you can just substitute 1 tablespoon of flaxseed oil (trust me, it won't make you fat..I've been having 1 Tbsp almost every morning, and I've lost 60 pounds!). These whip up perfectly in a Magic Bullet blender, plus the cups that come with it are easily transportable.

Pork Empanadas

These were good. All three of my kids liked them, which is close to miraculous. They were very handy to keep in the freezer and reheat during the busy week. They were, however, very dry. I tried doubling the salsa..but still found them to be rather dry. I will make them again, but next time I'll brown the roast and cook it in a crock pot. I also doubled the dough ingredients and made the balls a little bigger. That way, when I rolled them out to about 4", I could trim the edges before rolling them the rest of the way. This helped keep them from tearing and made nice even circles.

Old Fashioned Coconut Cream Pie

This was the creamiset, most delicious coconut cream pie I've ever eaten. I made it for guests, and it was very popular. One guest talked about it for days afterwards. Only change I would make...and not really a change..but, I would sprinkle the toasted coconut on individual pieces just before serving, as it does tend to get soggy in the refrigerator (that's assuming there's any left to refrigerate). The contrast between the toasted coconut and the creaminess of the pie is delightful!

Microwave Peanut Brittle

This peanut brittle turned out perfectly for me. It was fast and easy to prepare and was BETTER than the peanut brittle I've made before the old-fashioned way. I brought some in to work and it was gone in no time!

Potato Leek Soup III

I lightened this up a lot by using only 12 cup of butter and one can of fat-free evaporated milk. I also used Klondike Rose potatoes (a red-skinned gold potato) and left the skin on to add a little color, texture and nutritional value.
