Chocolate Toffee Crunchies

Very good treats. After reading some of the reviews with problems others had..here is what I did: I lightly butttered the pan, then lined it with parchment paper which was also buttered and which extended up the sides of the pan. I assembled and baked the bars per the recipe, but before they were set, I lightly scored them into squares (I didn't cut all the way through, just through the chcolate and the top of the crust layer) then when the chocolate was completely hardened, I pulled the bars out by grabbing a hold of the edges of the parchment paper, then placed them on the counter and was able to just snap them into nice little squares. I had absolutely no issue with greasiness or with the butter seperating. I would think that if you did it was because either you used margarine (and you really really do have to use REAL butter for this..it's a chemistry thing), or low quality butter or else you didn't let the toffee mixture boil long enough. I started counting my one minute after it was at a complete full boil

Spiced Butternut Squash Soup

Excellent soup! I omitted the onion and doubled the leeks (because I had them) and left out the sherry (because I didn't have any) but it was still marvelous! I made mine with 6 cups of chicken broth and it was the perfect consistency. Very pretty served with a swirl of sour cream and a sprinkle of fresh snipped chives. Will definitely make again and again...

Grandma Ople's Apple Pie

Very good as is. I agree with those who say to wait and try it before adding spices. The only thing I added was a sprinkle of coarse sanding sugar over the crust. The crust on the pie is delicious and beautiful! If your pie is turning out mushy and runny, it could be because of the apples you are using. Tarter apples hold up better in pies...a lot of apples will just turn to mush. So stick to Granny Smiths or other very tart apples. I used Red Haralsons from the tree in my yard and they worked perfectly.

Stephanie's Freezer Spaghetti Sauce

Due to mixed reviews, I cooked my sauce on the stovetop until it was the desired consistency (about two and a half hours). As other reviewers have mentioned, peeling the tomatoes first is a good idea. I thought the recipe was pretty fantastic. Only changes I made were to use fresh herbs instead of dried (because I had them) and I added a couple of bay leaves. Also, I'd recommend cutting the salt in half. You can always add more later. I used the sauce last night for baked ravioli (beef ravioli layered with the sauce and shredded mozzarella) and it got rave reviews.

Huevos Mexicanos

Slow Cooker Homemade Beans

After reading the reviews, I altered the recipe a bit and they turned out just fine. I actually did the "quick soak" method on my beans...boiled them for a few minutes, and then left them sitting in the covered pot for an hour before draining them and putting them in the crock pot with the bacon, onion and seasonings. I coked them on "high" for 4 hours, until they were moderately tender, then added the ketchup and cooked on low for another six hours. I also cut the brown sugar in half, since others mentioned it was too sweet. Next time I wouldn't though...because I kind of like mine a little sweet. Overall, good recipe, but it did seem like something was missing..and I just couldn't place it.

Jalapeno Bread I

I thought this was practically perfect! I just harvested my first batch of jalepenos from my garden, and was looking for something different to do with them. I chopped them extra-extra fine and used the Kraft cheddar-monterey jack crumbles, and that seemed to work great. The loaf was beautiful, a lovely golden color with a perfect texture and a crispy crust. I'll be making this a lot.

Kentucky Biscuits

Wow..these are so simple and delicious! I made a triple batch, but it still didn't last long. Nice and crispy, but light..and, compared to most biscuits, these are moist! I used my leftovers for ham and cheese sandwiches, as well as breakfast sandwiches..and the square shape accomodated itself well to that.

BACARDI® Mixers Grasshopper Pie

This was a very elegant and light dessert. The only thing I would change is to maybe make extra whipped cream to garnish the top along with some chocolate curls. It tasted a little bit "boozy" but not overwhelmingly so...just needed to be prettied up a bit, I think.

Ultimate Twice Baked Potatoes

Chicken Satay

I made this last night on my Foreman grilll and served it with coconut asian rice and it was AMAZING!!! All 3 of my children loved it...even my 13 year old who has all of a sudden become the pickiest eater ever. I only had time to let it marinate 3 hours...but it was perfect. Tasted just like the satay I get from my favorite restaurant. I'll be making this A LOT!

Lemon Blueberry Bread

I'd have to agree with the last review...I thought the lemon way overpowered the blueberrie..and normally I love the two together. I thought the glaze was a bit confused. I guess if I were to make it again, I would leave off the glaze and cut back on the lemon...but I really don't think I'll be making this again...it was really just so-so.
