Chef John's Buttermilk Biscuits

I really did not want to keep folding the dough and was tempted to just drop them on the baking sheet but so glad I followed instructions. They were awesome. I had to urge my husband to try one, he said he was not hungry and would wait until they cooled... but he changed his mind and ended up eating five! I did use salted butter because I did not have unsalted. They were so good I do not know if I will use unsalted next time and I will make them bigger. This recipe is a keeper.

Gorgonzola Salad

When I first mixed the ingrediants, I was not impressed with the flavor. But after adding it to the salad greens and topping it with the gorgonzola cheese.. umm. It taste very similiar to the salad served by an upscale italian restaurant my husband and I frequently visit. I, like others, added more garlic and extra vinegar and reduced the salt to 3/4 teaspoon. The only change I would have made is to maybe throw a few black olives on top. Maybe I will try that next time. Note: I have made this many times so for a variation, I used the Balsamic Vinegar dressing as someone else suggested. I like it much better with the dressing the recipe calls for. The Gorgonzola cheese does not taste as good with the Balsamic Vinegar.

Simply Parmesan Chicken

Nothing could be easier! I used pre-packaged Italian style bread crumbs instead of the italian seasoning. Fast, easy and delicious.

Yummy Cheese Ball

I took this to our family Christmas get-together. I did get to bring a little home but not much. Everyone seemed to enjoy it. I will make it again but next time I will make sure I purchase the 16 ounce pkg. of bacon instead of the 12 ounce (if they still make the full pound size). It really does need the full pound. Also, I think I will add 2, maybe 3, green onions next time. But it is good and a recipe worth saving. By the way, I served two cheese balls, one rolled in chopped pecans and the other rolled in chopped walnuts.

Avocado Dip II

The avocados get lost in all the other stuff..If you like the taste of fresh avocados, this recipe is not for you. I was not impressed with this recipe and will not make it again. But then again, I love fresh peeled avocados with nothing on them(it did get better after sitting in refrigerator awhile). There are some very good guacamole recipes in Allrecipes. Just look for them.
