Cajun Shrimp Orecchiette

Good base recipe but the sauce was a bit bland. I did cut back on the seasoning since I have little ones. Would like to have a sauce that is a bit more substantial.

Country Green Beans

These were good and the typical southern green bean dish that I remember when I lived in NC. I used bacon instead of the ham and used chicken broth to add another layer of flavor.

Zippy Cucumber Salad

Basil Tomato Soup

My family loved this. I made a few changes based on what I had in the pantry. I used cans of (still added the fresh basil) diced basil garlic oregano tomatoes, beef broth, and half and half. I also made a roux with the butter since my soup was on the thin side. Then blended it with an immersion blender to smooth it out since the kids don't like chunks. I also added some stellini pasta to the kids soup, tiny stars floating in tomato soup..who can resist!

Grilled Pineapple Slices

These are delicious. I did make a few simple changes that made the process so much easier. Instead of coconut milk I melted a small amount of virgin coconut oil, lightly coated my quartered, cored pieces and sprinkled with cinnamon and sugar. When they were done grilling, I cut the quarters into bite size chunks and they were great!

Gourmet Mushroom Risotto

I am not a big risotto fan but this was very tasty. I did not have any dry white wine so used vodka and it still came out great. It did take me longer than 20 minutes to get all 6 cups of broth incorporated.

Crustless Zucchini Pie

I love this zucchini pie. What a great use for the overabundance of zucchini from my fathers garden. I made a few changes based on the reviews, increased baking mix to 1 1/2 cup (used a high fiber mix), and decreased the oil to 1/4 cup. Turned out wonderful!!! Even my 1 and 3 year old love it!

Ron's Bread Machine White

This was the first recipe that was successful in my bread machine. The crust is crispy and the inside is so soft and chewy. Yummy!!!!! I think that this will be my recipe for white bread from this point on. I did add 1/3 cup sugar as other reviews suggested, but no other changes.

Oatmeal Chocolate Coconut Chewy

This cookie is yummy!! The only changes I made were to bake at 350 for 11 minutes and added a tsp of coconut extract. I did not add nuts since the taste tends to overpower the other flavors in a cookie. I cooled the batter and baked them on a silpat sheet and parchment. The ones baked on the silpat did not spread as much as the ones baked on parchment. Both were chewy with crisp edges. This recipe is a keeper!

Chuck Wagon Stew

This was a great quick weeknight meal. I used 3 cans of beef broth instead of bouillon and substituted leftover sauteed cabbage and frozen mixed veggies for the green beans. Great way to clear out some of the leftover veggies in the fridge! The stew is a great base that can be varied depending on what is available in your pantry!

Flourless Chocolate Cake II

Honey Baked Chicken II

Very mild curry taste. Make sure to trim all the fat from the chicken thighs or it becomes too oily. Tastes great with chicken tenders and chicken breasts also. My mom even loved this dish and she hates chicken. Sh e even called and asked for the recipe on this one!!

Caramelized Brussels Sprouts with Pistachios

This is a great recipe for brussel sprouts. I cut the sprouts in half prior to adding to the onions and also added a bit more vinegar and sugar right before serving to suit our tastes. I will definitely be making this again and again!

Cream Puff Cake

I have this same recipe from my mother and it is ALWAYS a hit with our family. My son requests this dessert every chance he can. Instead of cool whip we use whipped heavy cream. My mother is European and hates Cool Whip so we substitute.
