Mushroom Risotto

Great recipe!! I used soy milk instead of milk and cream and it worked great. Also, the rice I used was basmatti and for me it took only 2 cups of broth to cook the rice.

Cream of Mushroom Soup

Really good and simple. I used cornstarch to thicken it and added 1 cup of soy milk instead of half and half and I blended it until chunky with a hand blender. It came out really great, served it with lettuce, tomato, cucumber and feta cheese salad. Delicious!

Rhubarb Cake I

I really like this cake, it is a nice simple recipe and you can use any fruit. I used about 3-4 cups of fresh strawberries. I didn't find this cake too sweet like few others did. I didn't make the crumble topping but other than that I followed the recipe exactly.

Hungarian Mushroom Soup

We loved this soup and I made almost no changes to it except for veggie broth instead of chicken and plain yogurt instead of sour cream and like others suggested I used less parsley but I really love parsley so the other way would have probably been fine with me but my husband is not that crazy about it. Oh and the tip from one reviewer to use egg slicer to slice the mushrooms was a genius idea, it really did work like a dream. I will never slice mushrooms with a knife again. Thanks BETTIJOAN.

Marinated Tofu

I liked this very much and my husband liked it even more. I made a mistake though of not making sure all the slices of tofu are completely submerged in the marinade. The slices that were submerged all the way tasted so much better than the slices that had only some of the marinade on it. So I think I will quadruple this recipe next time.

Quinoa and Black Beans

This is really, really good and so healthy. I sauteed a yellow bell pepper with the onions and I used red quinoa because that is what I had. I replaced a can of black beans with a can of red kidney beans. Oh and I used parsley instead of cilantro because I don't like cilantro. Other than that I followed the recipe exactly and the dish came out awesome.

Addictive Sweet Potato Burritos

These burritos are fantastic!! I followed the recipe exactly except cutting back on the spices a little since we had only about 4 cups of beans. I love love the bean mixture and I love even more how it tastes together with sweet potatoes. The combination is perfect! We didn't have any sour cream so we ate it with low fat plain yogurt and it tasted great!

Spinach Lentil Soup

This was good and healthy. I chopped the carrots instead of shredding them. I didn't have any salsa so I added 2 medium fresh tomatoes, about a teaspoon of cayenne pepper and about 2 tablespoons of tomato paste. This came out perfect!

Gnocchi I

What a great and simple recipe!! It was my first time making gnocchi and it was definitely a success. I used about 1 and 1/4 cups of flour and added it as I thought it was necessary (as one reviewer suggested doing). Next time I might add some seasonings just to experiment. Thanks for a wonderful and quick recipe.

Cauliflower Soup

I love cauliflower and I really liked this soup but in my opinion it needs potatoes. I added them into the left over soup the next day. I sliced the carrots with a veggie slicer instead of shredding them and I think it would also be really good with some fresh parsley.

Broccoli Cheese Soup

Very good soup but I did make a few changes. I substituted about 1/4 of a cup of olive oil in place of butter and I used the hand blender to puree the whole thing once the broccoli was soft and I added soy milk instead of milk. I used shredded cheese and added that at the end like someone suggested. I didn't add any garlic powder but I think next time I will just use fresh garlic. It was delicious with bread rolls.

Creamy Potato and Leek Soup

This soup is so good! I used 3 leeks and added some thyme to the potatoes while they were cooking, I also added some cayenne pepper to give it a kick. Instead of heavy cream I was going to add soy milk but I forgot, I remembered after we ate it and apparently we didn't miss it, it tasted great.

Almond Cookies I

These cookies are amazing!!! I didn't have any amaretto liqueur so I used almond extract instead. I added 1/2 cup of canola oil instead of butter and they came out crumbly and delicious! As one reviewer suggested I toasted the almonds before grinding them. I increased almonds to 3/4 of a cup and decreased flour to 1 cup. I flattened the cookies slightly with a fork before baking. They baked great at 350 for 15 min. I think next time I will try adding mini chocolate chips. Chocolate and almonds, you can't go wrong with that combination. Thanks for a fantastic recipe.

Pasta with Vegetables

This was excellent but I did change some things. I didn't use any peppers or broccoli. Instead I added zucchini, leeks and carrots and I have to say it was a great choice I also skipped vinegar and used canola oil (about 1/4 of a cup) instead of olive. I added parsley and a sprinkle of cayenne pepper to the oil/herb mixture. Great and healthy recipe and an awesome way to use left over pasta.

Savory Kale, Cannellini Bean, and Potato Soup

Very good and healthy soup. The only things I changed were I added marjoram instead of sage just kind of last minute decision, I used 2 leeks instead of an onion and I didn't have a chili pepper (I guess I could have added chili powder but I didn't think of it).

MMMMM... Brownies

So good!! I had only 1 cup of chocolate chips so I substituted 1/4 cup of coca powder for the the 1/2 cup of chocolate chips I was missing and I increased sugar to 3/4 cup. Other than that I followed the recipe and they were fantastic. Moist and a little chewy. Oh I sprinkled some shredded coconut on top before baking it. Great with vanilla ice cream.

Connie's Zucchini "Crab" Cakes

These are so fantastic!! I have been making them for years, just never reviewed them before. My husband literally jumps with joy when I say I will make them. They are easy and so amazingly awesome they melt in your mouth and the taste is out of this world. I would give it 10 stars if that was an option.
