Barley Bake

I used leftover cooked barley and it turned out great. Kind of like barley risotto with mushrooms. I added a little bit of water and didn't bake it since my barley was already cooked. Pine nuts were so good in it.

Mom's Zucchini Bread

Lemon Cheesecake

Wow! This cheesecake is awesome!! My neighbor just gave me a bag of fresh lemons from his tree so this recipe was perfect timing! I made the graham cracker crust from this website (Graham Cracker Crust I). I didn't have any lemon yogurt so I used vanilla yogurt instead plus the 2 1/2 tbs of lemon juice (like the recipe states) and a zest of one lemon like some reviewers suggested, I skipped the flour completely and I used 2 eggs in place of egg substitute. I also made strawberry sauce for it. And WOW it was just perfect!!

Fresh Grapefruit Cake

I followed others suggestions and replaced milk with grapefruit juice and in my opinion that might have been a mistake, both my husband and I thought the grapefruit juice taste was a little overpowering. Overall my husband thought the cake was pretty good but it tasted kind of off to me (however I am 10 weeks pregnant and everything smells and tastes weird to me these days). I made powdered sugar and grapefruit juice glaze for it and I am sure that contributed to the overpowering grapefruit taste (and just to be clear I love grapefruits). I will make cream cheese frosting for it tonight and hopefully that will help the taste. Oh and I also cut sugar down to 1 cup because so many recipes have way to much sugar for my taste but in this case it might have been too much of a reduction, I think I should have cut it down to 1 1/2 cups. And for me it took 40 min to bake.

Pierogi (Polish Dumplings)

I am Polish (I grew up in Poland) and had many great pierogi. I myself am still learning to make them and I try to practice whenever I can. I like this recipe but the dough was too sticky and it needed more flour so I added it as I went. I made the sauerkraut filling and in Poland we added finely chopped mushrooms to it so that's what I did. We ate them boiled with fried onion on top and tonight as leftovers I will fry the pierogi themselves. I brushed them with oil before storing them in the fridge so they wouldn't stick together once they got cold.

Pumpkin Tart With Pecan Crust

This pie turned out wonderful!! I made graham cracker crust for it and used fresh pumpkin. Other than that I followed the recipe exactly. It was so delicious. I will be making it for Thanksgiving, thank you for an awesome recipe.

Favorite Strawberry Rhubarb Pie

This pie was pretty good. I used only 1/2 c of sugar and I thought it was plenty sweet and next time I will use 1 Tbs of cornstarch instead of tapioca. I love how simple it is to make and that the ingredient list is so short.

Caramelized Onion and Arugula Pizza

This turned out great! I did make a few changes though. I used a pre-made Trader Joe's crust. First I sauteed onions with about 2 cups of sliced mushrooms until very soft then I spread the onion mushroom mixture onto the crust and baked it at 400F for about 20min until the crust turned brown. Then I tore about 1 1/2 cups of arugula leaves into pieces leaving out the stems and spread it on top of the onions and mushrooms then I topped that with about 1/2 a cup of shredded parmesan cheese and about 1/4 of a cup of pine nuts. I put it back in the oven for 5 min until the cheese melted. It was delicious!!

Mushroom Risotto

Great recipe!! I used soy milk instead of milk and cream and it worked great. Also, the rice I used was basmatti and for me it took only 2 cups of broth to cook the rice.

Cream of Mushroom Soup

Really good and simple. I used cornstarch to thicken it and added 1 cup of soy milk instead of half and half and I blended it until chunky with a hand blender. It came out really great, served it with lettuce, tomato, cucumber and feta cheese salad. Delicious!

Rhubarb Cake I

I really like this cake, it is a nice simple recipe and you can use any fruit. I used about 3-4 cups of fresh strawberries. I didn't find this cake too sweet like few others did. I didn't make the crumble topping but other than that I followed the recipe exactly.

Hungarian Mushroom Soup

We loved this soup and I made almost no changes to it except for veggie broth instead of chicken and plain yogurt instead of sour cream and like others suggested I used less parsley but I really love parsley so the other way would have probably been fine with me but my husband is not that crazy about it. Oh and the tip from one reviewer to use egg slicer to slice the mushrooms was a genius idea, it really did work like a dream. I will never slice mushrooms with a knife again. Thanks BETTIJOAN.

Marinated Tofu

I liked this very much and my husband liked it even more. I made a mistake though of not making sure all the slices of tofu are completely submerged in the marinade. The slices that were submerged all the way tasted so much better than the slices that had only some of the marinade on it. So I think I will quadruple this recipe next time.

Quinoa and Black Beans

This is really, really good and so healthy. I sauteed a yellow bell pepper with the onions and I used red quinoa because that is what I had. I replaced a can of black beans with a can of red kidney beans. Oh and I used parsley instead of cilantro because I don't like cilantro. Other than that I followed the recipe exactly and the dish came out awesome.

Addictive Sweet Potato Burritos

These burritos are fantastic!! I followed the recipe exactly except cutting back on the spices a little since we had only about 4 cups of beans. I love love the bean mixture and I love even more how it tastes together with sweet potatoes. The combination is perfect! We didn't have any sour cream so we ate it with low fat plain yogurt and it tasted great!

Spinach Lentil Soup

This was good and healthy. I chopped the carrots instead of shredding them. I didn't have any salsa so I added 2 medium fresh tomatoes, about a teaspoon of cayenne pepper and about 2 tablespoons of tomato paste. This came out perfect!

Gnocchi I

What a great and simple recipe!! It was my first time making gnocchi and it was definitely a success. I used about 1 and 1/4 cups of flour and added it as I thought it was necessary (as one reviewer suggested doing). Next time I might add some seasonings just to experiment. Thanks for a wonderful and quick recipe.
