Shepherd's Pie VI

I made this for dinner tonight. Everyone liked it, adults and the kids. I used baby carrots which I cut in half along with the onion and cooked them with the hamburger. I also added frozen peas right before putting it in the casserole dish. I used the ketchup and beef broth as the recipe stated and not gravy and I am glad that I did. It turned out very good.

Coconut Cream Pie

I did make a few changes based on the reviews that I read. I used a can of coconut milk and whole milk. I also used the corn starch instead of flour. I followed the recipe otherwise. I made it last night, and tasted the filling which was super yum even hot, and let it set in the fridge over night. I will serve it for Easter dinner tonight. It is definitely set up `and nice and thick.

Banana Cream Pie I

This turned out great. Today, Easter, is my first attempt at making this type of pie from scratch. I was surprised, even after reading the reviews at how easy it was to make. I only strayed from the recipe in that I used the corn starch suggestion instead of flour and I increased the amount of banana to five instead of four. I also stirred the sliced banana into the custard mixture instead of over it. I didn't bake the pie but put it straight into the fridge as most reviewers suggested. The filling was very thick and seemed to hold together well even while hot for me. I didn't have any "soupy" problems that some reviewers had. I tasted the filling before filling the crust. It was amazing even hot and I can't wait to serve it for dessert tonight!

Soft Caramel Corn

I made this for the gaggle of nieces & nephews along with my kids and the ones I baby sit. About 12 children in all. I halved the recipe and used air popped popcorn. I Salted the popcorn but did not butter it at all. I tried to follow the recipe but ended up being a tad short on corn syrup but it still turned out very yummy. I also added about a teaspoon of vanilla and a fourth of a tsp of baking soda at the very end of the caramel mixture. Otherwise I followed the recipe. this turned out very yummy and the kids ate the huge bowl that it made. I still think it might have been a tad too much caramel for my tastes but the kiddos all devoured it. I have had a very hard time in the past finding a good caramel popcorn recipe. This is now my go-to!

Jan's Chocolate Cake

I made the recipe as is. I made a pan of cupcakes (12) and a 10 inch round cake. The cupcakes burned a tad but the cake turned out perfect. Both were moist and delicious even with the bottom of them a little burned tasting. I used a triple chocolate fudge frosting that had tiny chips in from the store. It went great together. My husband died and went to heaven. He ate about half of the cake that night. He said it almost tasted like the thick, dense Italian style cakes from specialty bakeries. We will make this again for sure. The reason I gave it four stars instead of five is because it was almost too much for me. One tiny piece for me was way more than enough and usually I can down chocolate like its nothing :)

Simple Whole Wheat Bread

I usually do not like wheat bread but mu hubby bought wheat flour on accident so I thought I would try this out. It turned out fantastic! I cut the recipe by a third so that I would end up with two loaves as I didn't think my KA could handle the whole recipe. And I was right, it would not have been able to. I followed the recipe as written however, I forgot to add the second amount of honey. It didn't matter. It turned out wonderful. We (the kids and I) ate a full loaf right out of the oven with butter and jam. We ended up eating it all night and didn't even make dinner. haha. Very good! a keeper for sure! Just follow the recipe and it'll turn out perfect!

World's Easiest Bread Machine Pizza Dough

I just made this dough to make homemade calzones. I had to make some minor changes due to what I had available in my pantry. I used canola oil instead of olive and I used garlic powder instead of minced garlic. I also added onion powder in the same amount as the garlic to the recipe. Every thing else I did the same. When I took out the dough from the bread machine I rolled it out and cut it into 4 equal pieces using a pizza cutter. them rolled each piece out put sauce and topping folded the top half over and closed. then put on a greased cookie sheet and brushed the tops of calzones with melted butter. I was worried that the dough might not cook all the way through but this turned out beautifully!!! Golden brown and crisp on the outside and nice and soft dough on the inside. DELICIOUS! This will be my new pizza dough and dough for any Italian dish as well as rolls. Very tasty!!

Vegetarian Cabbage Rolls

Have made 3 times now and still Very Good! Everyone eats this! I don't ever cook with wine because I don't know it well enough so I omitted the white wine from the recipe when I make it. I used all of the ingredients (except the wine) in the amounts listed but because I am lazy and don't want to spend all day cooking I made this into a casserole instead of cabbage rolls. I put the rice on to steam first then I sautéed the onion, bell pepper and garlic together in a large stock pot. Then added the protein crumbles and cooked them all the way through. Next I added all spices, tomato soup and canned tomatoes. I chopped up the cabbage into bite sized pieces and added that to the pot and let simmer on low for about one hour or until the rice was finished. added rice to the pot and mixed everything up. poured into casserole dish and baked at 350 for 30 minutes. I serve it with shredded cheese on top and homemade dinner rolls.

Outrageous Chocolate Chip Cookies

I made these as written. I thought they were good. The family thought they were good. We will probably make them again but they weren't jaw dropping great IMO. the one thing I did love about them was they didn't spread a ton. The texture was really very good.

Banana Fritters

I had 3 very ripe bananas on hand and my nieces sleeping over. we made these for breakfast. I used all 3 bananas and put a full teaspoon of cinnamon. These are the only changes to the recipe that I made. we sprinkled with powdered sugar and ate them warm. We all liked them but I most likely will be making my banana bread next time instead of this recipe.

Black Bean and Rice Burritos

Mixed bag. I made this recipe as written except left out the cayenne pepper because my nieces are very sensitive to "spicy" food (5 and 10 years) and super picky eaters. All the kids scarfed down the food and loved it. I thought they were okay. a little weird but still good and I would probably make them again however my husband hated them. he didn't like them at all. He kept asking what spices I used and when I told him he said that for him it was the cloves and nutmeg that "ruined" the dish.

Bean Soup With Kale

I made as written and thought it was okay. Some changes that I have since made are I use butter and cook the onion garlic, added carrot and potatoes (2 of each) and until the onions are translucent. I used one can of white navy beans and blended them in their own juice until smooth the. I added all ingredients to the crock pit and cooked on high. My family loved it and I serve with warm corn bread.

Slow Cooker Taco Soup

We are vegetarian and I used boca veggie crumbles as a substitute for the hamburger. I put them in a large pot and cooked them with the onion then I added everything else to the pot, I also substituted the water and used vegetable broth instead. I also added a splash of V8 as well. The end result was very good. We all loved it and I will be making it again for sure.

White Chocolate Raspberry Cheesecake

I read the tips article before trying this recipe. It it the second attempt at cheesecake (a different recipe) and my first attempt was an epic fail. I beat the cream cheese by itself first until very smooth. Followed this recipe except I used semi sweet chic chip instead of white because it's what I had on hand. I baked at 325 for an hour and then cracked the oven door and left it for another hour. Then I let it sit on my counter top for an additional 30 minutes. Covered and put in the fridge over night. Delicious! Also this recipe had too much batter for my pan so I also made cupcake sized mini cheesecakes for my kiddos. I will be making this over and over. Advice for a newbie at cheese cake read the tips article! It will help you a ton!!! Let the cheese get to room temp

Caramel Popcorn

As written I had problems with this recipe. Although I was following the directions exactly the carmel would either burn in the oven within the first 15 minutes or turned out so granulated that it hurt the tongue to eat. I just couldn't believe that the recipe had so many perfect reviews so I kept trying to get this recipe to work. I finally came across Sarah's review and took her advice. Increased Corn syrup to 3/4 cup and baking soda to a full teaspoon and reduced salt to 1/2 teaspoon. It turned out great with those changes!!!! I melted down some Hersheys HUGS and drizzled on top. Soo Yummy! I also noticed that I had to increase the amount of popped popcorn to 3/4 cup uncooked kernels. 1/2 was too little and would cause the carmel to be too thick which would cause it to be grainy as well.

Home Made Top Tarts!

I made these using Stephanie's basic flaky pie crust recipe because I didn't have any of the store bought kind. I used corn starch and heat to thicken up some raspberry jam and while that was cooling I spread a little Nutella on each then spread the raspberry jam. I wet a finger and ran it around the edges of the crust one one side before closing. Then crimped with fork. I opted for no frosting on top and I loved them. My son preferred them sprinkled with powder sugar. Very yummy and a lot easier to make than I suspected.
