Quick and Easy Green Chile Chicken Enchilada Casserole

I made this last night and everyone raved. They asked for it again tonight! I make part of the pan without chicken for me and it works great. I serve it with black beans.

Chocolate Fantasy Bars

Black Bean and Salsa Soup

I am a novice at cooking beans, so I didn't realize how much they grow when water is added. I used a 2 lb bag and ended up with tons of beans! Mine ended up a bit dry, next time I will add more water. Also, I halved the butter and it was plenty.

Apple Crisp II

I can't give this five stars only because I don't love baked apples, but this double-crusted version of apple crisp is probably the best I've had. I made one and a half times the amount of topping, but I guess I spread it too thickly on the bottom of the pan because there wasn't enough to cover the apples completely on top. I covered it for the first half of the 45 min. to keep the apples from drying out. Next time I'll probably double the topping. I used Braeburn apples just because they were on sale and it turned out great.

Oatmeal and Wheat Flour Blueberry Pancakes

I loved these pancakes! I was afraid the oatmeal and wheat flour would make them too heavy, but they were great. I used raspberries because my family doesn't like blueberries and it turned out delicious.
