Honey Mustard BBQ Pork Chops

Reviewed: Apr. 7, 2005
Not bad, but nothing like I expected either. Maybe if I'm looking for variety I might try again but not in any hurry.

Baked Havarti Chicken

Reviewed: Apr. 7, 2005
I LOVED this recipe! I did change it a bit but still, it was just delightful. I couldn't find greek seasoning ANYWHERE but I did find a recipe that was repeated word for word on sever sites so I just made my own. Don't know if that makes a difference or not but still, I can't complain. Also, I left out the chili's because I was afraid they would overpower the dish but my sister insists that they give excellent flavor so next time I will give them a try. Lastly, I pounded the chicken flat simply because that's my prefernce with boneless chicken breast. An excellent recipe for chicken and a keeper in our household. Would even make for a company dinner just to show off. ;)

Irresistible Irish Soda Bread

Reviewed: Apr. 7, 2005
I give two stars because first, it was incredibly easy to make, but honestly one of my daughters loved it with apricot jam, the other 4 of us found it be be plain, boring and nothing special. Unfortunately, not a keeper for us.

Greek Salad III

Reviewed: Apr. 7, 2005
I made this with the baked havarti chicken and it was excellent. Hubby, who was skeptical, and not fond of feta, actually said "ok, we can move to greece now" ;) I was actually quite proud that I made my own dresing rather than using store bought. The only thing that i changed was that i let the veggies marinate in the dressing overnight and I think it turned out excellent. Resturant quality even. Will absolutely make again.

Beefy Cheese Dip

Not bad but way too much for a casual get together. I probably would make again but would cut it way down as it made soooo much.

Bacon Roll Ups I

Reviewed: Apr. 7, 2005
I personally would give this one 5 stars but because they sat around for so long and I pretty much finished them off I have to go for 4 stars. I used the peperidge farms bread which honestly is a bit pricey and it still crumbled a bit while rolling up but luckily the bacon hid most of the damage. I also found that cuting it in halves rather than thirds was much easier. Also, i actually ended up throwing some of it away because I ran out of the spread....perhaps I was too generous? Either way, I'm sure I'll make these again, even if I'm the one finishing them off. :)

Pepperoni Dip I

Reviewed: Apr. 7, 2005
I found this recipe to be just "ok". Not one of my favorite's or something that anyone wowed over. I cut up fresh onion bagels and toasted them for dipping which I think worked better than tortillia chips, but even still, unless I'm going for plenty of variety, I don't really think I'll be making this one often.

Tortilla Rollups II

Reviewed: Apr. 7, 2005
I've tried making these before with just the cream cheese and salsa but I think the green onions really made a difference. Referidgerating them before cutting is a definate must as I found the hard way with prior tries. But, I made them for a little casual get together with friends and they were the first to go. Another one I'll be making again and again I'm sure.

Slow Cooker Split Pea Sausage Soup

Reviewed: Apr. 7, 2005
Being traditional and afraid of change, I used ham instead of the sausage. And then after I already started cooking it, I was browsing through the reviews and noticed all of the comments about it being too thin, which was quite worrisome because i added an extra 2 cups of water since I find my soup always comes out too thick to begin with. I decided to ad an extra bag of peas and ended up with the same old soup...the condensed version that had to be thinnned. Even so, pea soup is pea soup and I enjoyed it all the same.

Pleasant Pork Chops

Reviewed: Apr. 7, 2005
I have to say that this is my absolute new favorite pork chop recipe. I've tried so many new recipes and have been disappointed. This is the keeper though! The only thing I changed was adding some garlic and onion powder while browning, just for extra flavor. My chops were about 1 1/2" thick and the hour cooking time was perfect. Everyone, including the kids, ate as much as they could. An absolute keeper for us!

Heavenly Potatoes and Ham

Reviewed: Jan. 21, 2005
Tastes like an improved version of scalloped potatoes. Following other reviewers suggestions, I halved the amount of potatoes and cut them into slices, and still they barely fit into the dish. In fact, I had to put a cookie sheet on the bottom rack to catch all of the spilling. After removing from the oven I had a small puddle of butter laying there on the cookie sheet and still, the potatoes were swimming in butter, even after halving the butter. I will definitly cut down on the butter next time. I was afraid of the potatoes getting mushy so I put the potatoes in raw and cooked for about 1 1/2 hours, like my regular scalloped potatoes, and they came out perfect. Also, I used regular breadcrumbs and parmesan/romano cheese. I didn't really notice the cheese much, perhaps should have used more as others recommended. The hardest part for me, was stirring the mixture, but well worth the work. My new favorite leftover ham recipe!

Slow Cooker Chicken Cacciatore

Reviewed: Jan. 21, 2005
I altered this recipe a bit to suit our family's tastes but the recipe still served as a wonderful basis for a great dish. I used only 3 boneless skinless breasts (whole) as we don't really care for leftover chicken, and threw them right in there frozen as I've heard other reviewers say they've done this and I wanted to try for those days when I forget to thaw. It was cooked to perfection, fork tender and juicy in approx 7 hours. How wonderful! I used whole fresh mushrooms since they're easier to pick out (hate em!) and sliced the onion into rings for those who don't like them. I am big on garlic so I added about 4 big cloves, chopped, and also added some Italian seasoning and basil. 1/4 cup of wine, a can of diced tomatoes (flavored) and a can of tomato paste and voila! excellent, excellent chicken. My hubby requested I make extra sauce for dipping and such. Will make again and again!

Garlic Green Beans

Reviewed: Jan. 17, 2005
I used fresh green beans and forgot the chesse in the midst of dinner rush, but found them to be wonderful. Only thing wrong was that I chopped the garic instead of slicing ( I misread) and it was a little too browned, but I will definitely be making these again. Thanks!

Porchetta Italiana

Reviewed: Jan. 17, 2005
I think maybe I just don't like this cut of pork. But I wanted to give it a try. It was so unappealing that I couldn't even bring myself to serve it. Perhaps it would be better with a pork loin, however I will not try again that's for sure.

Slow Cooker Chicken Parisienne

Reviewed: Jan. 6, 2005
Wonderful chicken! Even my 7 y/o gave it a mmmm not too bad. The wine was a little overpowering however, next time I think I'll cut it in half. I mad a few changes based on other reviews. I added sliced garlic, fresh mushrooms, sliced onion rings and used cream of chicken instead of cream of mushroom. Will definately try again.

Ultimate Twice Baked Potatoes

maybe i didn't use big enough potatoes? found it to be a bit too mushy, i generally like it a little more potatoey but not bad. i mixed bacon into the potato for extra flavor and will use less green onions if i try again.
