Sausage Minestrone

This soup is very tasty & not hard at all. Very thick - does fine with half the macaroni, or a little more broth.

Curried Squash Soup

Simple & tasty. I used fat-free sour cream & omitted the whipping cream, so I'm sure the real version is even better. I also mixed the sour cream topping into the whole batch. Probably not as classy as the garnish, but just as good.

Savory TMT Sandwich Filling

I'm relatively new to miso, so this was a great find! I loved the recipe the way it was, but for those who aren't as fond of the tofu flavor, I added 2 Tbsp of dijon mustard & a shake of rice vinegar to tang it up a little. (Can you verb tang?)

Indian Chickpeas

I'm new to cooking indian food, and this turned out very well. I used more garam masala instead of channa masala spice mix, and added a bit more than called for just before serving. I also stirred in 2 cubes of cream that I had frozen in an icecube tray for just such an occasion. Very tasty.

Italian Vegetable Soup

I use an altered more veggie-friendly version of this recipe a lot, and have gotten good reviews, even from our quite non-vegetarian family. I eliminated the beef (and celery-yuck) altogether, replaced water with veggie broth for added flavor (although it was good with water too) and replaced the macaroni with red potatoes. Also, the first time I accidently made it with seasoned spaghetti sauce instead of just plain tomato sauce and the extra flavor was good so I left it in my recipe. It's a great "normal" soup to serve guests who shy away from creative cooking.

Chicken Makhani (Indian Butter Chicken)

I second the advice to use ground cashews as the thickener -- yum! Another trick for making this a little healthier & cheaper is to use chickpeas in place of some of the chicken.

Cream of Acorn Squash Soup

Great comfort food, even if you don't have the white wine. I've been tossing some fresh baby spinach in when I heat it up, just for some added goodness.
