I'm a stay at home mom and I have a wonderful little girl. She was 4 years old when I first started using this site and now she's 9. I volunteer at her school, am involved in a Bible study and love to cook!
My favorite things to cook
I am a Mexican food junkie! I have perfected my taco meat recipe over many years and my friend says no one's taco's are as good as mine. I make my own hot sauce, too, which gives me hiccups with one bite, but it is so tasty and good. I also enjoy making Italian food and I have an out-of-this-world lasagne recipe that I've perfected over the years. My dad says mine is better than our local Italian restaurant, which boasts that it serves the best lasagne. I always strive to do my best for my family.
My favorite family cooking traditions
I learned to make my dad's Christmas Eve Chili, which we have eaten on Christmas Eve for as long as I can remember. Learning to make the chili taste as good as his was a happy day for me. Now I can carry on this tradition and pass it down to my daughter. We also make home made ice cream every 4th of July and I finally found the most awesome recipe and that's been our base ice cream for years now. We love making home made ice cream. Nothing compares to it and we have the old fashioned kind where we crank it until it's done. It's the best!
My cooking triumphs
I finally made a wonderful Prime Rib Roast for Christmas this year! I've tried doing them in the past and they never turned out very good. I'm happy to say that I finally made a worth while Prime Rib the whole family loved!
My cooking tragedies
I've had many cooking tragedies throughout the years, but that's what makes a good cook. You learn from your mistakes. I remember making a cake one year for my mom's birthday that had caramel in the bottom of the pan. The smoke alarm went off and I came into the kitchen to find smoke pouring out of the oven. I've made pork chops that were tough as leather, biscuits that could have been used as hockey pucks and cakes that came out painfully dry. But I never let it stop me from trying again. I enjoy cooking and half the fun is discovering something new that your whole family loves.

Buttermilk Ranch Cheeseball
I just made this recipe for our cozy New Year's Eve tomorrow night and for our New Year's Day party. I did add a few things like some others suggested. I very rarely make a recipe without tweaking it in some way, so I hope no offense to Castoways, who posted the original recipe. For starters, I doubled the recipe. With that in mind, I added in 2 tablespoons of dried onions, a teaspoon of garlic powder, fresh ground pepper and roughly 4 teaspoons Worchestershire sauce, maybe more. The worchestershire sauce really completed this recipe. It added that little extra something that I thought it needed. I made 2 logs and then rolled them in toasted pecans. This made a delicious cheese spread and is exactly what I was looking for. My family will go nuts over it. I'll be using this recipe again. Thank you so much!

Country Apple Dumplings
These were so good and so simple to put together. Perfect easy dessert for a cold winter night. I've also used peaches and pears. I usually use Ginger Ale as that's normally the kind of soda I have on hand. Whole family loves them!

Peanut Butter Pie VII
The recipe I have is a little different, mine calling for 4 egg yokes, but I added 1/4 cup peanut butter to the custard after it was cooked to give it more of a peanut butter taste. It was delicious! I also do not like meringue at all, so I used whipped cream (can use cool whip) to top the pie with and then sprinked the peanut butter/confectioners sugar on top. It was out of this world! If you are a peanut butter lover like I am, you will love this pie! Also, I made my pie with a home made graham cracker crust. This pie is addicting!
