Chocolate Chip Cookies VI

These were well-received by my husband and the rest of his police crew. I used half brown sugar and half white, plus half butter and half Crisco. I would cut the flour down a little since they were a touch dry. Definitely a cakey-cookie, like the consistency of a pumpkin cookie. Also, grated the zucchini instead of chopped. Thanks for the recipe.

Fabulous Fudge Chocolate Cake

This cake WAS fabulous, moist, rich dense... it was good. I used cocoa and oil instead of baking chocolate and it was still rich. I did increase it to the equivilent of 5 ounces of chocolate, like some reviewers suggested. Instead of the caramel frosting, I topped it with my own caramel pecan topping which was awesome. Cook 1 cup brown sugar, 1/2 cup butter, 2 T. flour and 1 egg in a saucepan until thickened. Stir in 3/4 cup chopped pecans and 1 tsp. vanilla. Thanks for the recipe.

Chocolate Chip Oat Bars

These get five stars for being super quick and easy and still really tasty! I used milk chocolate chunks. You get a flat, chewy, chocolatey bar. Be sure not to overcook though, or I think they could easily get too hard.

Fresh Peach Pie II

This is my husband's all-time favorite pie. An improvement over my family's old recipe that called for too much cornstarch. This seemed to gel up just right. Homemade crust and real whipped cream make a huge difference.

Family-Style French Toast

We really enjoyed this french toast for a change of pace. I did not soak the bread as I think that would be too soggy for our taste, but just dipped the pieces of french bread in the eggs. I will use this one for big work crew breakfasts where I need a lot done at once.

Restaurant-Style Zuppa Toscana

This turned out really good and was actually a very fast and easy meal. Even using turkey Italian sausage and half and half instead of heavy cream, it was still plenty rich. I used fresh spinach from our garden instead of kale and it was fine as long as it is shredded well.

Yellow Squash Casserole

This was very good. I didn't have crackers so I used dry bread crumbs mixed with the cheese. Next time I'll try one egg instead of two to cut down on the egginess.
