Pasta with Spinach Pesto Sauce

Wow! This was surprisingly good! I added a handful of basil from my garden instead of Italian seasonings and it was very close to pesto. All my kids ate it. My daughter and I couldn't get over how good it was. Great recipe and I will be using this instead of pesto recipes. I also used baco bits and only 14 oz of angel hair.

Acorn Squash Soup

Amazing! Husband bought acorn squash instead of butternut and I found this recipe. Followed it exactly and only wish I used fresh garlic in there somewhere. Ended up putting some garlic powder in the end. Oh and I did not use bacon. It was so yummy and hubby LOVED it.

Vietnamese Fresh Spring Rolls

Baked Kale Chips

These were great!!!! What a wonderful option for Kale! I do agree that the cooking time is crucial!!!! Watch them like a hawk..... too brown is bad and limp kale needs to be cooked a tad bit longer.

Ruth's Grandma's Pie Crust

This was a WINNER!! I got so many compliments on this crust (even my baker mother inlaw loved it and wants the recipe). It did make more than I needed for a double crust pie. I agree with amother reveiwer who said it makes enough for a double crust and almost a single crust.

Carrot Cake X

This is very good and you feel good eating it! I did change a few things. I used unsweetened applesauce instead of the oil, used only 3/4 c of sugar, replaced the coconut with raisins (I made this for my 1 yr olds b-day and he loves rasins :) ) and cut the nuts in half. He loved it and we did too. I did cheat and use the cream cheese frosting from Carrot Cake III from here. I had extra batter so I made muffins for my husbands breakfast. Will definetly be making this again!

Butter Cream Frosting II

This was ok. I guess I should have stuck to using shortening, but I hate using that stuff. So I used all butter and it came out ok. It was also very sweet! I really wanted to like it too since it got all rave reviews. I dont think I will use again.

Southwestern Lentil Salad

Oh ya, this was great! We ate them with whole wheat pita bread and squeezed some lemon on the salad after it was made. This was so good. I also only used about 1/4 cup of oil and that was enough.
