Great Pumpkin Cookies

Excellent. My kids loved it, I loved it. I followed suggestions of using 1 1/2 cups pumpkin (and I added about 1/3 cup oats to compensate for the extra moisture). I also added about a cup or so of chocolate chips to the batter and then just used a scoop to put the cookies on the sheet.

Banana Banana Bread

Excellent, and very easy. I added 1/2 tsp vanilla, dash of allspice and a few dashes of cinnamon...and chocolate chips. I substitued 1 cup of brown rice flour for regular flour. It was great and would have been fine w/o the choc chips, I just had a few extras on hand and threw them in. I baked four mini-loaves in 36 minutes.

Cherry Crumble

Sooooo easy and soooo good. I used a little over 2 cups of fresh Wisconsin cherries, which were slightly tart. I added 1/2 cup sugar and 1TLB flour to the cherries (I wanted to preserve the tartness). I also added a few dashes of Allspice to the crumble mix. The juxtaposition of tart cherries and sweet crumble was just perfect! Everyone loved it!

Erin's Indonesian Chicken

This was a crowd pleaser! I added other veggies (carrots, green pepper and a little onion) just to make it a "one pot" meal. I also tried to short-cut by cooking the veggies and meat together...wasn't the greatest idea b/c the veggies were a little overcooked. But the great taste of the sauce saved the day. I love Thai food and this was excellent. I will serve again...but will cook the veggies separately!!

Lamb Meatballs

Very good and easy. I added a little salt at the end. Also, I didn't have lemon zest so I used a bit of lemon juice...worked out fine. We actually had this for dinner, not cocktails!! Husband really liked it.

Cola Pot Roast II

Very good and easy. I didn't have the brown gravy mix so I added some flour, pepper and a bit of olive oil...seemed to work out fine. I also added some potatos and mushrooms. Definitely could have added more veggies (quantity not variety).

Thighs on Rice

Soooo easy and economical! I added 1/2 cup liquid (used chicken broth), mushrooms and poultry seasoning. I put the chicken right on top of the rice and it worked perfectly. I cooked the chicken (boneless thighs) for 45 minutes while covered and another 15 uncovered (but I do have to cook things a bit longer in my oven). My husband loved it and he hates anything that remotely looks like a casserole.
