Ropa Vieja in a Slow Cooker

I never give a 5 but this was perfect- delicious and so easy. I used flank steak instead of a pot roast and added in some length-wise sliced oonions from my garden (we like spicy) as well as a bit of cayenne. Leftovers were used in a quesadilla. Thanks for the great recipe!

Crab-Stuffed Catfish

Great base recipe but I made several modifications. Added garlic cloves and onions in the crab mixture, dash of Worstechire sauce, chopped up a jalepeno from my garden in it as well. Substituted olive oil for the butter and nixed the cheese to make it more healthy. Served it on a bed of jasmine rice and lentils on the side.

Arrabbiata Sauce

Changes I made: more tomato paste, added in oregano, used fresh tomatoes from my garden, fresh basil and parsley is a must. Very versatile: you can add pretty much anything to it.

Loved the taste but only one complaint...I would halve the sugar next time. Too sweet for my taste- but I like a bit of a pucker when I take a bite of my salad.

Lemon Cream Pasta with Chicken

Delicious after a few changes: I up'd the amount of garlic (I love garlic), added red pepper flakes (gave it a little kick) and used half anf half to lower the calories. Also threw is what frozen vegetables I had along with some capers. hint: I added too much lemon zest and put in a teaspoon of splenda which balanced it out. Save time and saute the chicken (after cutting into bite sized pieces) in a skillet. Was more moist that way too. Thanks for an easy recipe.

Banana Sour Cream Bread

I used pumpkin spice and some nutmeg. Hand mixed it- very dense and bread like if you don't use the electris mixer. Made two loaves and they are pretty much gone!

Thai Peanut Chicken

I was very excited to try this out since I love peanut butter. It was so so. My boyfriend loved it, but I feel it was lacking something. I ended up tripling the sauce as suggested (you have to of there eill not be enough), adding in chili pepper flakes, throwing in a bag of frozen veggies, and upping the vinegar. It was wonderful for a quick 20 minute meal but I wish I could figure out what was missing. Also, cilantro is a must. Great for a quick meal but it just didn't hit the spot.

Pistachio Crusted Chicken

My boyfriend made this for me (and he does not cook very often) but it turned out delicious. He used a bit more honey than asked because I love the chicken-honey combination. We ate it with a side of mac n cheese. Perfect and not too difficult!!

Bread Pudding II

DO NOT USE SPLENDA!! It would have been pretty good if I had not used splenda. For some reason it just had an awful aftertaste. When I do make it again, I will probably add more cinnamon or even just put in 2 teaspoons on pumpkin pie spice. I may try to use pumpkin bread next time and see how that turns out.

BBQ Chicken Pizza

Great basic recipe- changes I made- added a few tsp hot sauce to the bbq, sauteed the chicken in a few tblsps of the bbq sauce to keep it moist. added pineapples on the pizza to balance the spice. Did not have red onion so I just sliced up yellow REAL thin so they would cook. Also topped it off with a bit of oregano. I did not have pepperocinni so I used some canned jalepenos I had on hand. Delish! Thanks!!

Grandma's Chicken Noodle Soup

This was great with a few changes. Add carrots, garlic, oregano, a whole rotisserie chicken then shred it and out it back in. No salt- I also used low sodium chicken broth and some stock I had left over. I added a lot more noodles cause that's my favorite part. Made a ton so I froze some for the coming months. Completely hit the spot!

Cranberry, Sausage and Apple Stuffing

I have never given a recipe 5 stars before but this was amazing! I used two apples and lots of chicken broth as I cooked it out of the chicken. I also did not add cranberries- it just sounded too sweet. I made it the night before and only threw it in the oven for 45 minutes. The next day at a potluck I threw it in the oven for 7-9 minutes and broiled the top for a more to give it a little crust on top. Overall- delish! Oh yeah I also used chicken and apple sausage I happened to find at the grocery store that day...a lot healthier too.

Filet with a Merlot Sauce

I made a few tiny changes to tweak- I love garlic so I almost doubled the amount, used more thyme, and added a few chili pepper flakes in the sauce. Also doubled the butter which made the sauce more creamy. All in all it was a great recipe and can certainly be used to make cheaper cuts of meat better.

Marie's Easy Slow Cooker Pot Roast

Made this last night- good starting recipe but I tasted it while it was cooking and found it a bit bland. So to spice it up a bit- 1/4 c wrcesteshire cause, 2 tbls garlic powder, 2 bay leaves, rubbed the chuck with paprika, and marinated it in red wine vinegar the night before and it was very tender. I would also leave out the carrots next time as the potatoes picked up an odd flavor from them and I like my potatoes to taste like potatoes. Thanks for the recipe!

Sweet and Gooey Chicken Wings

This was delicious! I was a bit skeptical because it seemes so easy which it was. But the brown sugar made the dish. The sauce was great over white rice as well. The only reason I did not gove it a 5 was because it wasn't that gooey. I recommend letting it sit out for 15-20 minutes before serving because the flavor gets alot better. What I also did was put everything in foil and wrap it up for the first 45 minutes and the chicken was falling off the bone since it was almost steamed. Added more garlic as well. The last 50 minutes I took off the foil from the top so it browned real well. Will make again.

Spaghetti Pie II

So easy and convenient. I made everything the night before and popped it in the oven fir 35 min when guests came over. Changes I made- used a jar of my favorite spaghetti sauce, added in green peppers, added a pinch or crushed red pepper in the meat saucem usd ricotta cause I think it tastes better. But I do recommend using a casserole dish istead of two pie dishes like I did. Froze half to reheat later. Serve with garlic bread taken from the freezer section and some caprese salad I made at home. Highly recommend if you want nothing too too fancy but very filling. Just hits the spot.
