Turkey Tetrazzini II

My family LOVED this one! I did what others suggested and added a few things: first I saute'd some onions in olive oil, then added some minced garlic, added the turkey to heat it through, added another tablespoon of olive oil with the flour and let it all cook until the flour smelled nutty, then I added some homemade turkey stock instead of the chicken broth, then the milk, and the rest of the recipe. The only other thing I did different was that I added the butter in cubes all over the top of the dish, then added the cheese on top and baked it for only 20 minutes when the cheese was browned. It was so rich and creamy!! Even my girlfriend who hates turkey leftovers had seconds! Highly recommended.

Christmas Strawberry Bread

This tasted pretty good. I've never had a strawberry bread before, so this was new for me. I thought the cinnamon seemed excessive, so i only put in 1 teaspoon and the strawberry extract seemed like a lot too, so i only put in 1 teaspoon of that as well. But when i tasted the batter it didn't taste enough like strawberry even with all the fruit in there, so i put in the full 2 tablespoons of extract. However, next time i think i'll just use strawberry jam because by the time you put in all the extract you've just about used up the little bottle. I made the glaze and it tasted pretty good, altho i don't think the bread really needs it, I think it would taste great and stay moist on it's own without the glaze. I also did not get the nice pink color shown in the photo, mine was a light pinky-brown. I also ended up baking it longer than stated because it just wasn't getting done in the middle, i added additional 20 minutes and didn't want it to burn all around the edges so i took it out and after it cooled it fell in the middle and was a bit under baked still. Another reviewer suggested increasing the temperature as well as the bake time, so next time i'll try that. All in all this was pretty good and i'll make it again for friends and family.

Plain Caramel Apples

Tastes great, but don't put them on wax paper, the apples stick really badly. I don't know how i'm going to package them up and bring them to a harvest dinner tomorrow night.

Apple-Honey Dutch Baby

This was delicious! I had egg whites to use up so that's what i used instead of whole eggs, also i didn't have apples to make the topping so instead i added chocolate chips and banana to the batter. My family loved it! My only complaint with it was it was difficult to get it out of the pan, it stuck a bit even tho i used the butter to coat the bottom and sides. I"m not really sure what to do about that, perhaps i should have taken it out of the pan immediately instead of waiting a minute or two.

Best Cherry Pie

definitely not the best cherry pie i've ever had. I agree the filling has too much sugar, i'd cut back to at least 3/4 next time. Filling was simple to put together and tasted good, but it's not the best ever.

Super Moist Pumpkin Bread

Followed the recipe to the letter and it just didn't work out well at all. Sure, it was super moist...almost too moist. I let it cool overnight and when i cut it the next day the loaf just fell apart. It tasted OK, nothing spectacular. I've definitely had better pumpkin bread than this.

Make Ahead French Toast

Tried this recipe last week. Was a bit skeptical as well. I generally don't soak french toast for more than a minute because i don't like it too soft. However, i had some bread slices that were left out and dried and needed to use them up so i figured, French Toast! I mixed the "soak" as directed but since i like it more on the firm side, I only put in 1/2 cup of the milk. I also added a bit of cinnamon. The next day i made the glaze. (again, was skeptical....i mean, i never glazed french toast before) but tried it anyway, baked it and served. Waited for the reactions and well....it was awesome! Definitely making this again!

Apple Bundt Cake

This recipe is fantastic! I was a little nervous when the cake came out a little dark on the edges, but it wasn't burned at all just a wonderful caramelized crust that kept the rest of the cake moist on the inside and a nice caramel crust on the outside. I served it at a meeting and everyone loved it. Definitely will make this every fall when we go apple picking from now on.

Banana Pudding IV

This was AWESOME! I made it for a BBQ and everyone LOVED it! I used fat free cream cheese and sugar free pudding and sugar free cool whip and it was just sweet enough with the condensed milk. I also used 1 cup less on the milk because i wanted a thicker consistency and it was AMAZING! I think it would also go great if you substituted any other fruit with the bananas, the topping lends itself to so many other flavors like strawberries, or citrus zest in the pudding mixture, etc etc etc. Thank you so much for a delicious and versatile recipe!

Chicken Tortilla Soup V

this soup is awesome and so easy to make too. I took it 1 step easier and used a store bought rotisserie chicken and shredded the meat off it instead of cooking my own chicken. I also added a can of black beans. I like the flavor of the soup, it was just the right amount of heat, not overly spicy and definitely enjoyed the toppings of cheese and sour cream, altho they are not necessarily needed, the soup is great by itself.

New England Blueberry Coffee Cake

Cake has good flavor, i especially like the topping. The batter was too dry so i needed to add a little more milk and I don't know if when i did that it changed the chemical composition or if it's my pan or oven, but the cake was done on the edges and not done in the middle. I ended up cutting out the middle and tossing it. But, the edges that WERE done tasted really good.
