Authentic Louisiana Red Beans and Rice

Reviewed: Sep. 5, 2014
This was very delicious. I got nervous as I was cooking it because I used 2 cans of red kidney beans instead of the dry beans. I had read another review that said she cut the cook time in half since she used can beans. So I browned the sausage. Then cooked the veggies in the grease left over from the sausage. Poured the veggies in one container of chicken broth, it ended up being about 4 ounces I believe. Let it simmer for about 30 minutes then added the sausage in with the beans/spices/veggies/broth that had been simmering for 30 mins. Still when I was done it was too soupy. I read other reviews where people added the rice in the pot. That thickened it up just right. I was worried for nothing because it turned out amazing since I added the rice with the mixture. I also added more Tonys seasoning and extra cayenne pepper since we love spicy. Used 3 bay leaves, oregano, parsley. I kinda just threw ot in as I thought necessary. Thanks for great recipe. Oh and I added one can of tomatoes/chiles when I added the sausage to the mix. So overall I had celery, bell pepper, tomatoes/chiles, garlic, onion, beans, and sausage.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Aug. 20, 2014
This was a big hit!!! I read so many of the reviews and was debating how much wing sauce to put with the chicken. We love spicy stuff! I just happened to have about 10 ounces of Louisiana wing sauce original in the cabinet so I used that. I also added about a tablespoon of butter in the beginning with one packet of ranch. Cooked on low for about 4 hours then turned on high for about one hour then shredded the chicken and put back in the original sauce. Once shredded I put back on low for about 2 hours which was perfect. I used 2 frozen breasts and 5 tenderloins. This made a big batch!! I was so unsure to drain the chicken or not but I am glad I did not, the shredded chicken soaked up the rest of the sauce. I never did add any extra hot sauce. I also added about 1/4 block of cream cheese and a little garlic pepper. This was perfect. It was very spicy so I would never be able to use the entire bottle of Wing sauce. Thank you for a great recipe!!!!!!! Oh and I used hoagie buns, I put butter on them and a thin layer of sharp shredded cheddar and baked about 4 minutes for a toasted bun. Happy happy husband!!!

The best chicken salad I've ever eaten. My family loves it. I originally used walnuts and they are perfect for this. On a different occasion, I used almonds. Both are great but we prefer walnuts. Delicious and my go to chicken salad!!

Chicken Enchiladas II

Reviewed: Jun. 1, 2014
Made this tonight & it was a big hit!! I thought i messed it up because I forgot to add the sour cream, but I went back and added it and it turns out really good. I doubled the recipe & realized I only had 8 of the 6" or 8" tortillas (flour). But it still was really good! Also, I added about 1 cup extra cheese because we love cheesy food!! Overall, great dinner and will make again.

Cheesy Buffalo Chicken Dip

Reviewed: Mar. 16, 2014
This is one of our favorites! I also made a few changes. I used one 12.5oz can of chicken (but next time will probably use two cans) one doesn't seem quite enough. Even one & a half would be good. 3/4 cup of RedHot sauce, if you don't like spicy food I would make it 1/2 cup. Two 8oz blocks of cream cheese, softened. 1 cup ranch dressing. And about 1&1/4 cups sharp cheddar cheese, because we love cheese! This is actually really quick and easy. I bake dish for 15 mins, take out and add the cheese evenly, and put back in the oven for 10 or 15 minutes. Prep time 5-7 mins, bake 25-30 mins, & enjoy!!!

Bacon Ranch Pasta Salad

Reviewed: Mar. 16, 2014
This was really tasty!!! I am surprisingly happy with the way it turned out because I used miracle whip instead of mayo. Also, since I don't like olives, I chopped one green bell pepper and added to the mix. You will definitely need to add more milk to have the creamy texture. Overall, great pasta salad and very pleased husband!!!

Stuffed Green Peppers I

Reviewed: Feb. 15, 2014
These were great! The only thing I'd say is to boil/cook the rice before it is added to the meat mixture. Unless I missed something, it seems above to add uncooked rice to mixture and once tender then move to next step. I did that and the end result was the rice was not cooked. Other than that, it was delicious and I will cook the rice alone next time first! Thank you for great recipe! & used 2 cans of tomatoes/green chiles instead of the others.I am terrible with rice so I cook my rice in a rice cooker in the microwave for about 8 mins (let it steam with vents closed for about 4 mins) and add it to the pot to simmer covered for a few mins.

Easy Mexican Casserole

Reviewed: Dec. 30, 2013
So delicious! I followed one of the other reviewers below, she made some minor changes and it was PERFECT! I did 2 cups of broken tortilla chips on bottom, thin layer of cheese on top of the chips, then the meat mix(beef/Mexicorn/black beans/1 can rotel spicy), 1 cup sour cream spread, 1/2 cup green onions/1 can rotel spicy then the rest of the 2 cups of cheese on top. It was so yummy!! I was confused on which to follow but I am so glad I did it this way! Thank you so much, and thank you Wildflower86!
