Buffalo Chicken Dip

Excellent dip that is adjustable to personal heat levels. I mixed all ingredients together in a skillet over low to medium heat to allow cream cheese to melt consistently - I absolutely HATE trying to mix anything with cream cheese, so this way proved to have less frustration for me. After the cream cheese was evenly distrubuted throughout the chicken/sauce mix, I moved everything to a casserole dish, topped with remaining cheese and baked at 350 for about 20 minutes. Delicious!

Country Apple Dumplings

OH. MY!!!! Had I been able to give this recipe 5+ stars, I would! I made this last night for my family - halved the recipe since there are only four of us and it was oh so delicious! Side note: don't stress much about your sugar dissolving fully into the melted butter. If it doesn't, it still forms a nice crust on top of the dumplings. I could have easily reduced the amount of butter down from 3/4 cup to around 1/2 cup (but if you do so, be sure to also reduce the amount of sugar ). I also used apple pie spice instead of using plain cinnamon. Diet Mtn. Dew worked just as well as regular without the added sugar. Yummy!! Highly recommend!

Slow Cooker Beef Stew

I gave this recipe a 3 due to the obvious inaccuracy of the measurement of beef broth. Be prepared when you are getting your shopping list ready that you will need AT LEAST 5 cans of beef broth in order to have enough liquid. I used the original recommendation of two and had to go buy three more cans in order for the liquid to even cover the ingredients. I also left out the rutabaga due to personal taste. ADDITIONAL NOTE: I read the following review which gave this recipe 5 stars- please note I had to add the additional beef broth AFTER I had cooked the stew for about four hours. It did NOT make beef soup, I ended up with a perfectly thick beef stew after amending the original recipe.

Slow Cooker Chicken Taco Soup

This is a great and easy recipe - especially for a group. I made a few minor changes - I did not use the beer, but added a can of chicken broth. I also added a little bit of additional cumin (app. 1-2 tsp.). The soup was looking a little thin for my taste, so I also added a small box of Velveeta - this made it the absolute perfect consistency and also a wonderful cheesy flavor without being overdone. Definitely a keeper!

Cornbread Salad I

Excellent recipe! Very good and it is a crowd pleaser. Tip: Make sure to use a deep baking dish - I used a regular 13x9 pan and it almost ran over the top!

Easy Quiche

This recipe was certainly very quick and easy to make. I only have a few criticism/changes to make. First, the amount of broccoli recommended in the recipe seems to be a bit much. I ended up with an overwhelming broccoli flavor to mine, so if you're not a huge fan, you might want to scale back a bit on that. Also, I added a bit of sauteed onion and bacon to mine, as well as salt and pepper. The key thing with this quiche is to bake it in the proper pan. It did well going into two pie pans for me. Anything deeper and it would have been soggy. Otherwise, the easiness of this recipe is definitely reason to try it out!!

Taco Soup VIII

This was an excellent recipe to add to your dinner rotation. I did make a few minor changes/additions. I added a can of Rotel and a bit of extra ground beef and used chili beans instead of kidney beans. Very good flavor. This makes a soup that is more of a chili consistency, so it is excellent to serve with tortilla chips, sour cream and cheese on top.

Ramen Noodle Soup

I loved this recipe - the only reason I did not give it five stars was the inconsistency with the ingredient list. The list names chili oil, but not sesame oil. The directions include the use of sesame oil, but do not specify how much. This dish could turn bad if you add too much. However, overall very east and fast for a weeknight dinner. It is just as delicious using a different flavor of ramen noodles also.

Beef Nacho Casserole

This recipe is very easy and quick to make and tastes even better the next day. The only change I would make next time would be to add taco seasoning to the beef and add the remaining ingredients as suggested. Very good and will make again.

Easy Key Lime Pie I

Excellent flavor, very easy to make. I used regular lime juice instead of squeezing key limes and the flavor was great. Only complaint is that it doesn't make quite enough to fill up the pie crust - might need to increase it by half the original recipe to fill up the crust.
