Fettuccini with Basil and Brie

Made this for dinner last night. Used cherry tomatoes halved. Added shrimp which I sauteed with a second clove of minced garlic. Overall, very tasty. Will make again when we have extra Brie, which is not too often.

Braised Balsamic Chicken

I made this for dinner last night and was disappointed. Using some other reviewers suggestions I cubed the chicken first and added some brown sugar to the sauce. However the dish just wasn't anything special and I will not make it again.

Salmon with Brown Sugar and Bourbon Glaze

I made this for dinner last night and we loved it. My husband said it should become a regular in our house. I cooked it over medium in a non-stick pan and had no trouble with the sugar burning as long as I stirred it frequently.

New Year Spinach Fettuccine with Scallops

I used low-fat cream of mushroom soup and cut back on some of the oil. It turned out pretty good and lighter than some cream sauces.

Vikki's Red Bean Sausage

I used about half of the kidney beans and less of the spices but this still was a little too spicy for me. My husband liked it more. It's good served with rice or a baked potato.

Spicy Beef Curry Stew for the Slow Cooker

This recipe does not taste very curryish, but produces a good stew. I've tried adding more curry powder but it didn't help much.

Southwestern Pasta Salad

This is so easy to make and tastes terrific. I've made it twice so far. Once for my family I added chicken to make a main meal, and once as a side for a picnic. Without the meat it can take the heat of being outside for a while.

Zesty Slow Cooker Chicken Barbecue

I used fresh chicken and cooked it for about 5 hours. It was tasty Served over white rice. I will experiment with different BBQ sauces to change the taste and make extra next time.

Hearty Mince

I like anything you can make in one skillet and this was very easy to make. I used some ziti instead of rotini, which took longer to cook. The sour cream and sherry are what really make this good. Next time I will double for more leftovers.

Ramen Coleslaw

My husband and I liked this better the second day when I combined it with some Asian marinated chopped chicken breats and made wraps. It could use a little more of a kick to it but I liked the crunchy texture.

Baked Mushroom Thighs

I used less milk to make the sauce for this recipe, and I had trouble getting the bread crumbs to stick. It tasted ok to me and my husband liked it even more because he likes anything with extra sauce.

Hoagie Bake

I made a slightly healthier version of this recipe by only using turkey and roast beef for the meats, and limiting the cheese to one layer of provlone. I also added pickles, banana peppers and yellow mustard. It was a little soggy on the bottom, probably from the pickles and banana peppers, but my husband and I really enjoyed it. I can't way to try some more variations.
