Baked French Fries I

I love baking fries. I find the cooking time to be too long and usually only back them for 20-25 minutes, depending on the shape/size. I often get lazy and just use cajun seasoning instead of this mixture, but I do enjoy this combination of spices.

Mango Salsa Chicken

Definitely needed some lime juice, but all I had was lemon. This time I baked the chicken, but I think it would be much better marinated in a light marinade and grilled.

Restaurant-Style Buffalo Chicken Wings

This time I used Frank's Wing Sauce and added some hot sauce. Next time, I'll use regular Franks. I baked a batch and fried a batch-- I found only slighty differences and will bake them from now on. I also will seperate the wings at the joints before I do anything instead of seperating them after cooking.

Maple Walnut Fudge

This came out great! I used half brown sugar instead of all white and used more maple extract as another reviewer suggested. It came out SUPER creamy and delicious with the right amount of maple taste.

Chicken Pot Pie IX

I roasted a whole chicken, picked off the meat and used a mixture of meat (breast, thigh, etc) for the pie and other dishes. The pie, using the comments suggested, came out beautifully; however, I found that doubling the sauce as suggested made too much. I think next time I will not double the sauce and will also use more fresh vegetables-- all I had were frozen, which tasted good, but would have been better with fresh!

Eggplant Parmesan II

Really delicious and really cheesy! I salted the eggplant to let it dry out, but didn't rinse it off and found it to be a touch salty. Next time i would rinse and dry the slices before putting it together.

Potato, Broccoli and Cheese Soup

I loved it! I used 5 cups of chicken broth instead of the bouillon cubes and water. I also add a lot more broccoli-- like twice as much and sometimes I throw in some kale (steamed first). Turned out great! I'll definitely make this next year when my broccoli comes in!
