Ham Salad Spread

I wanted to like this but just didn't. I used leftover ham that was from a half ham. After I dumped the mayo/mustard mixture in & mixed it up, I realized it was way too much much & wished I had added half, stirred it then added more depending on how much I thought it needed. The real issue I had with this was the salty taste. I use the same ham in other recipes so I was surprised this had a really salty taste, I did not add any salt when I made this so it must have been the ham... no fault of the recipe but I think it wouldn't have suited my tastes even if it weren't for the saltiness.

Carrots in Dill Butter

These were good but next time I will use less water... pretty much all the water was left at the end of the cooking time but the carrots were tender. Good nonetheless.

Macaroni Salad with a Twist

This was pretty good. I used whole wheat rotini since I always buy whole wheat pasta, a red onion instead of a vidalia (I feel red onions are better for pasta salads) & diced the carrots instead of grating them (didn't feel like dirtying the grater). I would make again, maybe next time trying salami instead of ham.

Baked Penne

Just finished making this, it was good but I found it a little rich. I wouldn't say it makes 6 servings more like 4 if that. I added 5 cups of pasta instead of 3 & mixed all of the cooking creme in the meal rather than using some on top. I plan on making this again with the following changes: 1 13.25 box whole wheat penne pasta, 1 lb ground beef, 1 cup each chopped onions & green pepper, 2- 24 oz jars tomato sauce, 1 15 oz tub cooking creme, 2 cups of mozzarella cheese.

Chocolate Muffins

If you are expecting a bakery style muffin, you will be disappointed. This muffin basically tastes like devils food cake with chocolate chips in it. I think many of the reviewers failed to notice the bland texture since they doubled the amount of chocolate chips. I was disappointed with this muffin, it's really more of a cupcake than a muffin & didn't satisfy my craving for a chocolate muffin.

Garlic Prime Rib

I started this at 450 for 20 mins then lowered the temperature to 350 (so it could cook at the same temperature as the potatoes) & allowed 15 mins per pound. It was still way too rare (looked freshly butchered) at 15 mins per lb at 350. I would recommend 20 mins per lb at 350.

Rosemary Au Gratin Potatoes

Very good. Made as directed but used dried rosemary as that is what I had on hand. Next time I will use fresh rosemary. I used a mandolin to slice the potatoes very thin. I served this with prime rib for Christmas dinner. My husband couldn't stop raving about the potatoes. Thanks for the recipe.

Smothered Beef Short Ribs

This didn't come out well.... After doing the browning of the ribs & sauteeing the veggies, I threw everything in a crockpot. After putting in the 1 cup of wine, I could only fit in 4 cups of broth. I let it all cook on low for around 8 hours. Tried straining the broth out & making a sauce with it using a roux, on the stovetop in a small pan. We weren't thrilled with this, granted I did change it a little but who has 2 hours to sit around while dinner cooks & that is in addition to prep & clean up time. I wouldn't make this again, it was too much work for something mediocre.

Honey and Rosemary Sweet Potatoes

Baked Brunch Omelet

I found this to be bland. Giving it 4 stars since I admittingly changed the recipe. Instead of layering, I mixed the bread cubes, cheese & ham in a bowl then added to the pan & covered with the egg & milk mixture. I used 1 1/2 cups of cheese not lbs as another review mentioned but maybe I should have added more cheese. I think this needs something else, perhaps dry mustard. May or may not try again.

Sweet Cornbread Cake

This was AMAZING. I was literally eating the batter, it was so good. I halved the recipe for a 9 inch square pan, this baked for exactly 38 mins. I upped the cornmeal to 1 C & lowered the flour (used whole wheat) to 1 C. I don't keep whole milk on hand so I made a buttermilk substitute. I used skim milk & added a tablespoon of vinegar & let that sit for 10 mins before adding to the bowl. This recipe is just amazing. Best cornbread I have ever tasted. Right after making it, I ate 3 pieces, it was so good. Thanks for the recipe.

Baked Sweet Potatoes

I love sweet potatoes but this dish didn't wow me. The potatoes took forever to cut up. I sub'd rosemary for the oregano (not a fan of oregano). Stirred a few times during the baking time for even cooking. Not sure what I could do differently but I imagine this would taste better if caramelized some.

Slow-Cooked Short Ribs

This was good but it didn't wow us. Like many of the reviewers I sub'd bbq sauce for the chili sauce, I wish I hadn't & I plan on making the recipe exactly as written next time. We felt there wasn't enough of a kick in the sauce so next time I'll add some cayenne pepper & Tabasco.

Pork Tenderloin with Dijon Marsala Sauce

Very, very good. I use half & half instead of heavy cream to save calories... that is probably the reason why my sauce comes out a little thin, I plan on adding cornstarch next time to thicken it up a little. Out of the two times I've made this, the first time with the shallots & the second time without the shallots, we prefer it without. The sauce is delicious over steamed broccoli. We also enjoy mashed potatoes with this dish. Thanks for the recipe.

Grandmother's Buttermilk Cornbread

Very good but also very fattening, a stick of butter is a lot! We enjoyed, thanks for the recipe. Edit: I have made this a few times since. The last time I sub'd unsweetened applesauce for the butter- it didn't come out so well. More dense & chewy rather than light & fluffy when made as written. Will continue to make as written.

Red Velvet Pancakes

Very mediocre for all the work involved & dirty dishes to clean up. None of the grocery stores around here carry creme fraiche so I sub'd sour cream for it. Used whole wheat flour instead of white (I never cook with white flour). A few comments, mascarpone cheese is very thick like the consistency of cream cheese, you want to let it soften so it is easier to work with. A hand mixer would probably be best for the topping, I didn't use one & mine came out sort of grainy. My husband commented the topping wasn't sweet enough. Be careful with the food coloring if you have light countertops. As I squeezed it out, as it got to the end, it splattered a bit getting all over the counter. Luckily I had a Mr. Clean Magic Eraser, a regular sponge did not get it off. Lastly, Written as is this recipe is too much work for amount yielded, I recommend doubling it if you're making it. We got 9 medium size pancakes out of the batter, the griddle was very full.

Beef and Irish Stout Stew

Really, really good. After deglazing the pan, I transferred it to a crockpot & added basil. Cooked on low for around 6 hours. Served over mashed potatoes. We loved it as is, the flavor was wonderful. Didn't find it bitter like other reviewers did. Thanks for the recipe.
