Easy Stroganoff

Yummy comfort food! I made some changes to make this a little more friendly calorie / fat / sodium wise. I used whole wheat egg noodles (12 oz package), 1 bag of Boca Meatless Ground Crumbles, 2 Tbsp (or to taste) Low Sodium Worcestershire sauce, left out the seasoned salt, used 99% fat free cream of mushroom soup, 1 soup can of skim milk and low-fat sour cream. I also cooked my crumbles and garlic with a pan sprayed with Pam to prevent sticking. My husband gave it AAA+++ and said he would definitely eat it again.

Tuna and Chickpea Salad

This was absolutely fantastic! I made it to the recipe. My only substitutions were adding lemon peel from the fresh lemon and since I didn't have tuna in olive oil, I used two packets of low-sodium tuna + 1 Tbsp Olive Oil. I also went with the author's suggestion of adding drained, chopped artichoke hearts. Since my husband is on Phase 1 of South Beach, we served this over lettuce and it made a perfect light dinner on a hot, summer night. The lemon gives the perfect amount of brightness and the red onion that added zing! Thank you so much for a fabulous recipe!!!

Stuffed Bell Peppers

These were absolutely fantastic and will definitely be going into our repertoire of menu items:-) I used the Boca Ground Crumbles...and two red plus two green peppers to add a little color. We also did not have white rice, so I used Jasmine rice. Otherwise, left it exactly the same. I will say that the prep time for me was around 50 minutes, but soooo worth it!

Shrimp Gazpacho

I made this last night and let it sit in the fridge to allow the flavors to blend overnight. It was fantastic for lunch today and as I made the whole recipe, will be for many more lunches and dinners! I only made a few slight changes, using Low-Sodium Tomato Juice and a bottle of clam juice to sub for the tomato and clam juice cocktail. I also used 1 SlimCado (Florida Avocado) as it is lower in fat / calories and much bigger than a Hass Avocado. I seeded the cucumbers before cubing and only used 1 pound of salad shrimp. After following the recipe exactly after that...I found it needed a little more seasoning. So, I added about 1 Tbsp low-sodium worcestershire, 1-2 tsp celery salt, and several drops of tobasco. That made it 5 stars! With my changes, this came out to 117.9 Calories, 2.5 grams Total Fat (0.2g Saturated, 0.3g Polyunsaturated, 0.1g Monounsaturated), 73.7mg Cholesterol, 208.3mg Sodium, 611.1mg Potassium, 15.5g Total Carbs (2.3g dietary fiber, 6.5g sugar) and 9.9g Protein Per Serving (12 Servings)

Pork Chops with Blue Cheese Gravy

This was absolutely heavenly! I doubled the blue cheese but otherwise made exactly the same. It's very rich so it's not an every day meal but great for dinner parties or special occasions. Thanks so much for a great recipe.

Potato and Cheese Frittata

I made this exactly as stated, but used EggBeaters instead of real eggs. It turned out very delicious:-) It is a nice quick, easy recipe to put together after a long day at work and provided leftovers for the next day for the two of us.

Chicken Wing Dip

Yummy! Everyone who tasted this at a recent work party stated "It tastes just like chicken wings!" I took the advice of several other reviewers and switched out the ranch for blue cheese dressing and the cheddar for low-fat, part-skim mozzarella. I poached three chicken breasts in chicken broth, then added all of the ingredients to my food processor and pulsed until it was well blended. I increased the hot sauce to 1 cup, but will probably add more the next time. It wasn't hot enough for my personal taste, however was too hot for one of my peers. I didn't bake it in the oven as I made this the night before the party. Instead, I just heated it up in the microwave for about 5 minutes, stirring every minute to keep the cheese from burning. I will definitely take the advice of others and get a small crock-pot to keep this warm. I served it with Fritos and Celery sticks and it rocked!!! Thanks for such a great recipe!

Lazygirl's Ground Turkey Stroganoff

I took the advice of some of the other reviewers and added 1 whole onion diced, minced garlic, sliced baby portabello mushrooms, and a bag of frozen peas to the ground turkey mixture while cooking. I also made 12 oz. of Whole Wheat Egg Noodles, changed out the full fat cream of mushroom to fat free, added a can of fat free cream of chicken and about 4 Tablespoons of low fat sour cream. I also used chicken broth in the place of the water. My boyfriend loved this and it made 6 servings. Enough for left overs to take to work:-)

Raspberry Cheese Spread

I was looking for a recipe to bring to a birthday party and wow, am I glad I found this one! I am a diabetic and wanted something that I could munch on for an appetizer, so I used all light/low-fat ingredients w/sugar free raspberry jam. I also used the pre-cut green onions which made preparation even easier. I served it with Carr's Water Crackers/Carr's Whole Wheat Crackers. No one could tell that I had used light/low-fat ingredients and it was gone half-way through the party. Thanks for a great recipe!!!!

Easy Cream Cheese Danish
