Fusion Chili

I had some leftover ancho chills to use, so I searched high and low for a recipe in which I could incorporate them. I found this and was intrigued. I followed EVERYTHING except I omitted the celery because I had none. Instead, I threw in an extra cup of carrots. At the end, neither my husband nor I were impressed at all. He's from Mexico, so he mostly enjoys the smoky, spicy flavored recipes; however, this was a no go. It was too "smoky" for us and the spice was a bit much for me. I didn't get what everyone was saying about the sweetness. The spice was so overpowering that I could barely taste the honey. In the end, for as long as it took to make and the disappointing results, I have decided I will never make this again.

Pineapple Grilled Pork Chops

I first tried this because I was looking for something different to cook for the family. This was pretty darn good. The chops come out really tender and very flavorful. I have made this for get-togethers now and everyone always loves them. This is staying in the recipe box!

Asian Potato Salad

This was ok. I wanted something with an asian flare, so I decided to try this. I followed the recipe exactly. I felt the sesame oil was a little too overpowering. It's all I really tasted. Next time, I think I will reduce the sesame oil and just put some sesame seeds in the salad. It needed something else, I just can't figure out what. I will need to play with it. Overall, it was an ok recipe. It could be better with some tweaks.

Chocolate Tres Leches Cake

I made this recipe for my husband who is from Guanajuato, Mexico, so he is our resident Latin cuisine expert. I make tres leches quite a bit and I wanted to try something a bit different. I couldn't find an 18 oz. box of ANY cake mix, so I went with a 16.5 oz. box of a fudge cake. I left all other ingredients the same. The cake came out good and the icing came out good. The ONLY thing that I will change for next time is the amount of liquid I pour over the cake. Normally, I put more, but I wanted to follow the recipe at least the first time. So, I did and my husband and I both agree that it definitely needed more liquid. Tres leches, typically, are not that dry. They are supposed to be a pretty wet cake. So, all I got was a moist cake, not a tres leches. Overall, a pretty good recipe. I will just need to adjust the amount of liquid.
