Salsa Chicken

An update: This is our go-to dish. We use different spiciness taco seasoning, all different types of salsa, etc. And it is a weekly dish, easy, and few ingredients. Can't beat that combo!

Lentil and Sausage Soup

mmmm, good. I skipped the past and used about 3/4 lb sweet It sausage, and only 6 cups of water. The only thing I will change for future batches is to drain the sausage better first and add spinach at the end. I didn't add any salt-never do except for baking- and didn't use parsley since we didn't have any. I made this again for company with sweet italian turkey sausage (3 links), all broth, and threw in some spinach towards the end. Everyone loved it, and asked for the recipe. It does make a lot and I was glad to read that it froze well. For just the 2 of us, I make 1/2 recipe.

Ed Zieba's Famous Family Pork Chops

Used boneless chops. I didn't have any onions so rubbed garlic in and used BBQ sauce. Cooked for 30 min @400 and for 45 @350. very tender and tasty.

Pumpkin Bread Puddin'

This was delish. I doubled everything except the cloves and cooked it in a large casserole. I mixed the choc chips in, but didn't think they added anything. I also used 1 loaf of raisin cinnamon bread and a couple of slices of bakery white bread.

Spicy Beef Curry Stew for the Slow Cooker

I floured the beef before I braised it and used some substitutions-like powered ginger, sliced jalapenos from a jar, and hot curry powder. It was delicious and all got eaten right up. It was a little soupy, but serving it on rice took care of that.

Awesome and Easy Creamy Corn Casserole

We love this recipe. I used 1/4 C butter and 1/4 applesauce to cut down on the fat. Cooked it for an hour. Yummy.

Garlic Shrimp Spaghetti

we loved it. I only had frozen unshelled shrimp which made it messy to eat, but no less yummy. I didn't have any lemon juice or parsley so I threw in some Italian seasoning and some crushed red pepper. This will be a regular shrimp dish.

I make this all the time. Sometimes with sausage, sometimes with gr. beef, sometimes with no meat. I rarely use more than 1 C sour cream though. It is always a hit.

Seafood Cioppino

fantastic. I have made it twice. I used crushed red pepper for the chile pepper and I added 2 cans of clams and left out the mussels, using canned oysters instead. I am going to stock up on big shrimp whenever they are on sale, since the smaller shrimp dont cut it.

Lentils with Tomatoes
