Spiced Pecans

Reviewed: Nov. 22, 2013
I just finished a trial batch of these and they are very good, even though I forgot the salt. The egg mixture will coat more than 3 cups of nuts. I added a 1/2 tsp cayenne, and only a dash of cloves. In the oven for about 40 minutes at 250. Now if I can keep my hands off them..

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Reviewed: Mar. 22, 2013
Don't see the reason for vinegar or salt. I put my eggs in water, bring to a boil, turn the heat off as soon as it comes to a boil, wait 12 min, and then put them in ice water. Just don't crowd the pot. and they won't crack.

Cha Cha's White Chicken Chili

Reviewed: Dec. 22, 2012
With this recipe as the basis, I have made it in a variety of ways, including the way it is written. (I always do this the first time I make something) If I have the time, I use dried beans. I have used rotisserie chicken, poached chicken, and canned. The heat depends on who will be eating it. I like food very spicy so throw some McCormack firey pepper on top. I use the cheese as a topping along with greek yogurt and salsa. Yummy

Ratatouille Bake

Reviewed: Aug. 28, 2012
very good, but labor intensive. I did not peel the eggplant, but did salt it, rinse, and drain. I always make a recipe as written the first time-except for adding a couple dashes of crushed red pepper. Next time I won't hesitate to throw in whatever goodies our CSA has that week.

Salsa Chicken

Reviewed: Mar. 21, 2012
An update: This is our go-to dish. We use different spiciness taco seasoning, all different types of salsa, etc. And it is a weekly dish, easy, and few ingredients. Can't beat that combo!

Lentil and Sausage Soup

Reviewed: Oct. 14, 2011
mmmm, good. I skipped the past and used about 3/4 lb sweet It sausage, and only 6 cups of water. The only thing I will change for future batches is to drain the sausage better first and add spinach at the end. I didn't add any salt-never do except for baking- and didn't use parsley since we didn't have any. I made this again for company with sweet italian turkey sausage (3 links), all broth, and threw in some spinach towards the end. Everyone loved it, and asked for the recipe. It does make a lot and I was glad to read that it froze well. For just the 2 of us, I make 1/2 recipe.

Loved this. I didn't use any oyster liquid and a little more broth and it was perfect.

Pumpkin Bread Puddin'

Reviewed: Nov. 26, 2010
This was delish. I doubled everything except the cloves and cooked it in a large casserole. I mixed the choc chips in, but didn't think they added anything. I also used 1 loaf of raisin cinnamon bread and a couple of slices of bakery white bread.

Spicy Beef Curry Stew for the Slow Cooker

Reviewed: Jan. 31, 2010
I floured the beef before I braised it and used some substitutions-like powered ginger, sliced jalapenos from a jar, and hot curry powder. It was delicious and all got eaten right up. It was a little soupy, but serving it on rice took care of that.

We love this recipe. I used 1/4 C butter and 1/4 applesauce to cut down on the fat. Cooked it for an hour. Yummy.

Garlic Shrimp Spaghetti

Reviewed: Oct. 24, 2009
we loved it. I only had frozen unshelled shrimp which made it messy to eat, but no less yummy. I didn't have any lemon juice or parsley so I threw in some Italian seasoning and some crushed red pepper. This will be a regular shrimp dish.

Easy and Fast Cajun Chicken Caesar Salad

Reviewed: Jul. 22, 2006
Yum. I bought Blue CHeese dressing by mistake, so I left out the parm cheese and added celery and garlic for a chicken wing salad.

Baked Ziti III

I make this all the time. Sometimes with sausage, sometimes with gr. beef, sometimes with no meat. I rarely use more than 1 C sour cream though. It is always a hit.

Seafood Cioppino

Reviewed: Mar. 11, 2006
fantastic. I have made it twice. I used crushed red pepper for the chile pepper and I added 2 cans of clams and left out the mussels, using canned oysters instead. I am going to stock up on big shrimp whenever they are on sale, since the smaller shrimp dont cut it.

Saltine Toffee Cookies

this is an easy, delicious recipe. I used about 3/4 of a sleeve of saltines because I had a small pan, which I lined with no stick aluminum foil.
