I used the dough hook on my electric mixer and it worked great. I also just cut the butter into small chunks instead of cutting in. I will definitely make again!

Rhubarb Dream Bars

These were good. The rhubarb was tangy and great, even though I dropped the sugar to 2c. There was too much goo, though, so we had to eat most of the "bars" with a fork.

Big Soft Ginger Cookies

These are great! I used butter and chilled the dough before rolling into balls. I ended up with twice the number of cookies, so I must have made them smaller than suggested. I will definately make these again.

Artichoke and Tomato Chicken

This was good. Kinda like a cooked Caprese salad with chicken. I cut up the chicken and browned it, then followed the recipe rather than rolling it to speed up the prep/cooking time. It was good on top of pasta. I would make this again.

Crabless Chicken Cakes

I pulsed the chicken in a food processor instead of shredding it and added an egg to the mixture to make it hold together better. I also didn't have tartar sauce, so I just subbed more mayo. Could have made it a bit spicier. It turned out great! My 9 month old loved it. I will definately make again.

Baked Scalloped Potatoes

I boiled the potatoes for 10-15 minutes before I sliced and baked it all. It only took about 30 minutes to bake. I did need to add a bit of salt and garlic.

Cabbage Roll Casserole

Very good! I used a jar of spaghetti sauce and precooked everything, including the rice and cabbage, so I didn't need all the beef broth. It only needed to be heated through, about 30 minutes or so. It fits nicely in 2 9x13 pans, great to bake one and freeze one. We had no trouble finishing it off. I will definately make again.
