Southwestern Pasta Salad

This is excellent. A little diced purple onion and a can of sliced black olives are wonderful additions - maybe some cheese, too.

Three Pepper Pilaf

Had two chicken thighs and three pepper halves and was looking for a recipe. This fit the bill. Decided to make half a recipe planning to follow it exactly. If you cook the rice 20 minutes before adding the peppers I felt you would have raw peppers and rice mush so added the peppers about 8 minutes into the cooking time. It doesn't say to cover the pan, which you will want to do. I felt it was very bland and it took quit a bit of Tabasco to bring it to life. My husband liked it after he had eaten a few spoons of it, but I would not make it again.

Remarkable Fudge

This does make a lot of fudge! You will need to cook it more than 12 minutes. A candy thermometer really helps, but if you don't have one, cook and stir it an additional 4 minutes after you have a full rolling boil. I started in the top of a double boiler, but when I got to about 200, poured it into a deeper sauce pan and cooked it over direct heat stirring constantly until it reached 236. It has a very nice flavor, but just a bit grainy.

Chesapeake Crab Ball Appetizer

YOu could use half shrimp with this recipe. After I had mixed it, I increased the horseradish a little and added the juice of half a lemon. Very, very nice.
