Boilermaker Tailgate Chili

Loved, loved, LOVED this recipe! We made it for a family "Welcome Fall" get together we have every year, where we have a couple different kinds of soups. Everyone loved it and there was hardly any left. And it makes A LOT. It just barely fit in our crock pot without overflowing. Since some people in the family don't like things too spicy, we just used 4 cans of regular chili beans, which we didn't drain. We also used a milder chili pepper (I believe they were Anaheim). I will definitely make this again and may substitute cut up chuck roast next time for an extra "meatiness" factor.

Grandmother's Buttermilk Cornbread

By far THE best cornbread I have ever made or had. I especially liked the corner pieces. I thought it was the perfect amount of sweetness. We ate it with chili, but I would also eat it with some butter and honey. I will definitely be making this again and will count this as my go-to cornbread recipe.

Cuban Ropa Vieja

I made this recipe exactly as written and I thought it was good as a basic shredded beef recipe, but I would definitely recommend adding something to give it a little kick. I could see kids liking it cuz it's kinda bland, but my hubby and I agreed it could use a little heat. I will make it again, but next time I will add some tabasco or some chopped jalapenos. I'm not the kind of person who likes things really spicy, but just things to have lots of flavor. Green chiles might be good to add, too.

Orange Cream Cake IV

I read the previous reviews about how you can use white cake since orange cake is hard to find and many people commented on how the frosting was runny. So I used white cake instead of the orange and added orange juice instead of the milk, as one reviewer suggested. I still used the orange extract in the cake, but made a completely different frosting. I used a cream cheese frosting from this site and added a little bit more vanilla and powdered sugar than it called for to bring out the vanilla and have a good contrast between the orange and vanilla. After frosting the cupcakes, I put an orange slice gummy on each (as another reviewer had done). These were sooooooo good and everyone at our BBQ loved them. I will definitely be making these again!

Glazed Meatloaf II

HOLY COW this was good! My husband and I kept saying how much we enjoyed it. Like other reviewers suggested, I used 3/4 cup oats in place of the bread. I also couldn't find my loaf pan, so I did meatloaf muffins and will probably always do it like that! I baked them at 350 for 20 minutes and then spread the remaining sauce over them and then cooked them for just 5 more minutes to make sure they wouldn't come out too dry. They were so yummy and easy. Also, I doubled the onion. I plan on freezing the remaining muffins to eat some other time. YUM!

To Die For Blueberry Muffins

These were delicious! I took the advice of other reviewers and added 1/2 tsp. vanilla just cuz I love it so much. I also used brown sugar instead of regular for the topping. Also, I would probably 1/2 the topping mixture next time, as I had a lot left over that I just had to throw out. It ended up making 8 regular-sized muffins and I baked them for 18 minutes, as a reviewer suggested. SOOOOOO good and I will definitely be making these again!

Stuffed Green Peppers I

I gave this recipe 5 stars because it is a great base recipe that can be customized pretty easily. I followed the advice of other reviewers and made the following changes. I sauteed some minced garlic with the ground beef and onion. I also had some bell pepper left over that I needed to use, so I chopped that up and sauteed that with the mixture as well. I used a can of diced tomatoes with green chiles (undrained) in place of the whole peeled tomatoes and doubled the Worcestershire. I used beef broth in place of the 1/2 cup of water and some Italian seasoning and some cayenne pepper for extra seasoning. For the cheese, I had a Cheddar Jack blend and made sure to sprinkle some on top during the last 5 minutes of baking. It was very tasty! The rice wasn't quite done after simmering in the beef mixture for 15 minutes, so next time I will cook the rice separately and add it at the end. Next time I'm also going to try wild rice for a little extra flavor.

Spiced Banana Bread

I've been looking for a great banana bread recipe that includes spices like cinnamon and nutmeg because so many out there don't have them. This was an awesome recipe! I don't have a loaf pan for some reason (I need to go buy one!), but I did as another reviewer suggested and just used a 2-quart square baking dish. Perfect!! I only had 3 bananas, but I thought it still turned out phenomenal. Also, I did as a couple other reviewers suggested and did 1/2 sugar and 1/2 brown sugar. I will be making this again and again!

Classic Lasagna

This lasagna was phenomenal. I've been looking for a good standard lasagna recipe because I am 33 weeks pregnant and would like to start making meals to freeze. This fit the bill perfectly! My in-laws came over and kept raving about it. I just made a few changes, mostly based on other reviewer suggestions. I only used 2 cans of tomato sauce and 1 can tomato paste. I also used minced fresh garlic and kosher salt in place of the garlic salt. Since I didn't have oregano and basil, I used Italian seasoning and also a little cayenne pepper to give it just a little bit of a kick. I also used oven-ready, no-bake noodles for the ease. Finally, I covered it with foil while it baked until the last 15-20 minutes. Also, I baked it for 65 minutes and it came out perfect. I will definitely be making this again and again!

Lemon Chicken Soup

I'd say this is a good base for a soup, but I was somewhat disappointed. The only change I made was I added some more rice. I couldn't taste any lemon at all. I think it definitely needs more flavor. As for a chicken and rice soup, I am going to stick with the Creamy Chicken and Rice soup recipe on this site that is TO DIE FOR. I could see this being a good recipe for picky eaters like kids who like their food a little more bland.

Pasta Primavera

I was excited to find a primavera recipe because I was looking for a yummy way to incorporate fresh veggies into a pasta dish that didn't have a fatty sauce (like alfredo). I added chicken and did some different veggies. Instead of carrots and zucchini, squash, and broccoli, I added sundried tomatoes, kalamata olives, and chopped artichoke hearts. I added garlic to the veggies I sauteed and some garlic powder to the sauce and it was still VERY bland. I used chicken broth, as I didn't have white wine, and maybe that's why. Next time I'm going to use pesto because this was extremely bland. Even after adding red pepper flakes. I won't be making this again.

Slow Cooker Beef Stroganoff I

This was delicious! I followed the advice of other reviewers and doubled the sauce, added beef broth and half a package of onion soup mix, and added sauteed mushrooms and a little sour cream at the end. I topped each with parsley and it was WAY YUMMY!

Sweet, Sticky and Spicy Chicken

This was sensational! I took the advice of other reviewers and dredged the chicken in flour. I then cut up some bell pepper and onion and sauteed those in a little oil. Then I took them out of the pan and added a little bit more oil and browned the chicken. Then I took the chicken out and, because the pan was still really hot, when I added the sauce to the pan, it boiled immediately, but got nice and thick and sticky. Then I added everything back in and simmered it. I will make this again and again because my husband and I both LOVED it!

Lori's Famous Crab Cakes

I don't know what went wrong, but these didn't taste very good at all. I used Costco crab and just didn't like the taste of the cakes. My husband said they were pretty good, but I won't be making these again.

Lemon Cream Pasta with Chicken

This was very tasty. Like other reviewers, I opted not to bake the chicken. I dredged pieces of chicken in flour and then sauteed them in a little bit of oil to get them nice and brown. I also added a bell pepper and some onion. I'll definitely make this again! My husband and my mom loved it!

Macaroni and Cheese with Veggie Bacon

This recipe is AWESOME! I had been looking for a good mac & cheese recipe that didn't call for Velveeta or bread crumbs, and this one is perfect. It was creamy and delicious. Instead of the bacon, I added grilled chicken and steamed broccoli. I will definitely be making this again.

Unbelievable Chicken

This is an awesome marinade. I've found that even after marinating chicken, it can still be a little bland after it's grilled and many times, it needs BBQ sauce. Not the case with this marinade. The chicken was delicious on its own! I didn't have time to marinate it for very long, but it was still way yummy.

Quick and Easy Alfredo Sauce
