I am currently a technical support specialist, but am earning my master's in marketing. I have been happily married for 3 years.
My favorite things to cook
I love Asian food and could eat it everyday! I love to make stir-fry and LOVE sticky rice. My current favorite easy meal is garlic stir-fried veggies with rice pilaf and shaved parmesan. YUM! I also love to grill.
My favorite family cooking traditions
My Mom and sisters are TERRIFIC cooks, so all of our holiday meals are delicious! My Mom makes wonderful gravy for Thanksgiving and Christmas dinner is always delicious! Last year we had prime rib and lobster. YUM!
My cooking triumphs
For Valentine's Day a couple years ago I made my husband prime rib with mashed potatoes and gravy. The prime rib took a LOT longer to cook than the recipe said, but my husband raves about it and the gravy to this day. I just need to find that recipe again...
My cooking tragedies
I was in a Gourmet Foods class in high school once and we had to make a dessert of our choice. My friends and I chose Key Lime Pie. Well, it tasted okay, but we put WAY too much green food coloring in--it turned out army green!

Cuban Ropa Vieja
I made this recipe exactly as written and I thought it was good as a basic shredded beef recipe, but I would definitely recommend adding something to give it a little kick. I could see kids liking it cuz it's kinda bland, but my hubby and I agreed it could use a little heat. I will make it again, but next time I will add some tabasco or some chopped jalapenos. I'm not the kind of person who likes things really spicy, but just things to have lots of flavor. Green chiles might be good to add, too.

Orange Cream Cake IV
I read the previous reviews about how you can use white cake since orange cake is hard to find and many people commented on how the frosting was runny. So I used white cake instead of the orange and added orange juice instead of the milk, as one reviewer suggested. I still used the orange extract in the cake, but made a completely different frosting. I used a cream cheese frosting from this site and added a little bit more vanilla and powdered sugar than it called for to bring out the vanilla and have a good contrast between the orange and vanilla. After frosting the cupcakes, I put an orange slice gummy on each (as another reviewer had done). These were sooooooo good and everyone at our BBQ loved them. I will definitely be making these again!

Glazed Meatloaf II
HOLY COW this was good! My husband and I kept saying how much we enjoyed it. Like other reviewers suggested, I used 3/4 cup oats in place of the bread. I also couldn't find my loaf pan, so I did meatloaf muffins and will probably always do it like that! I baked them at 350 for 20 minutes and then spread the remaining sauce over them and then cooked them for just 5 more minutes to make sure they wouldn't come out too dry. They were so yummy and easy. Also, I doubled the onion. I plan on freezing the remaining muffins to eat some other time. YUM!
