Funnel Cakes IV

We enjoyed these and the wonderful aroma as they were frying said a lot! I followed the recipe as is except I may have only used between 2 1/2 to 3 cups of flour. I added 2tbsp of vanilla (love the taste of vanilla)! I also used more sugar (about 3/4c total). The extra left over was stored in the refrigerator (used an empty Kraft Ranch Dressing bottle with the small hole on the top. The piece/attachment on the bottle is easy enough to pop off so as to make putting the mix inside the bottle easy and it pops right back on. Quite a bit of mix was left over so stored the extra into the bottle and placed in refrigerator. This mix was made on a Friday and we were still making cakes on Sunday. Great recipe!

Sweet Potato Pie II

This pie was so good and I don't even care for sweet potatoe pie like that! While growing up my mom always made this pie during the holiday season. My daughter and husband who are not fans of any type of sweets loved this. I did double everything and added a couple of things which are things my mom has always used in her pies. Brushed the edges of pie crusts with egg whites and baked for about 5-7 mins before pouring pie mix. I used 1/2 cup of sweetened condensed milk and 1/2 cup of evap. milk, 1/2 cup white sugar and 1 1/4 cup brown sugar b/c of the amount of cinnamon used (1 tbsp) AND b/c this pie is not sweet potatoe pie unless its sweet, lol. Added 1 tbsp vanilla flavor and 1 tsp all spice. One thing about sweet potatoe pie is that you have to make it according to your taste. So what may work for some may not work for others. I read a lot of the reviews before making my pies and thanks to those who provided the great tips. So good luck and enjoy!

Good Old Fashioned Pancakes

This was delicious! I like this one better than the one I've been using. I did make a few additions as another reviewer (TEVANS211) suggested and added vanilla flavor (1 tsp) and sifted dry ingredients twice. I also allowed added 2tbsp of sugar and allowed the mix to sit for thickness at least 15mins after mixing all ingredients with wire whisk. Do not over mix, a few lumps in the mix is normal. Don't give a recipe a bad review if you're going to completely chop it!

Rita's Sweet Holiday Baked Ham

Wow!!! This was the best baked ham that my family and I have ever tasted. I will continue to use this recipe for the rest of my cooking years and hopefully pass it on to my kids.

Sweet Potato Casserole I

You Ain't Nothin' But A Hound Dogs

I haven't purchased jar chili sauce in over two years! This chili tastes much better. I'm from the south and a hot dog is not a hot dog without the chili, it's a must have! Changes I made was I used 1lb of ground beef because 1/2 lb was too saucy. I also always cook my beef with the seasonings adding the onions the last few mins of cooking time with the beef. I hate to say it, but I don't measure the chili powder, I just sprinkle until I've covered the ground beef, which is quite a bit. After draining and adding the sauce to the beef I allow to come to a boil and simmer for about 10-15mins. The thing is it does make quite a bit so if you have a small family and there are leftovers you can place in an airtight container and freeze until you are ready to use again.

Buttery Alfredo Sauce

All I have to say is that I haven't bought jar alfredo sauce (hated that stuff!) in two years! I do however add about a tsp of parsley (fresh or dried). Delicious! Thank you for such a great recipe!

Freak'n Good Ribs

I have been in search for a great recipe for ribs for a long time now. No more searching for me because I've found it! I do everything exactly as the recipe calls for, except I mix in a separate bowl seasonings above along with salt and pepper and rub onto the ribs. I then pour Italian dressing all over the ribs and allow the ribs to marinate in the dressing about 2hrs before pouring the juice marinade. I don't add the suggested garlic because there is enough garlic in the dressing. I then allow the ribs to marinate for the recommended time. I haven't used the grill yet so once I bake for above time I remove the ribs from the marinade, placing into another baking pan, adjust oven temp to 350 degrees and bake til done (probably about an hour) and it is throughout this last part of baking that I baste the BBQ sauce. They are still delicious!

Easy Sugar Cookies

Great cookies! They are still delicious and chewy two days later. I knew the day before that I wanted to bake these cookies the next say so my butter (unsalted) sat for a full day on counter top. I realized that I'd ran out of baking powder so I used 2 tsps of baking soda and a tsp of fresh lemon juice to make up for those acidic components and they were absolutely out of this world! I did start with rounded tsps of dough but they were too small. So I finished up with 1/2tbsp for each cookie. 1tsp will take 8mins and the 1/2tbsp took no more than 10mins. Enjoy!
