Peanut Crunch Cake

Delicious! I didn't have peanut butter chips so I added more chocolate chips. I used dry roasted peanuts for the topping and though I usually like salty and sweet, I thought the topping was the weak link in this cake. Will make again, probably omitting the topping altogether. The cake part was just perfect!

Barbecued Beef

Excellent!!! Best BBQ beef I have ever made. I didn't have red wine vinegar and used white wine vinegar instead. And I used 1/2 tsp cajun seasoning in place of the salt and pepper.

Slow Cooker Spare Ribs

I made the recipe as directed except used tomato bisque instead of regular tomato soup. I was generous with the brown sugar too. The meat is tasty - it did cook thoroughly in 6 hours, I think 8 hours is a bit much for only 2lbs of meat.

Balsamic Roasted Pork Loin

Very good, and very easy. An excellent meal for a work day. Made exactly as written. I did cover with foil while resting because I wasn't sure when we were going to sit down to eat and I am a little uncomfortable with any pink in pork. Was perfect after sitting for about 20 minutes or so.

Rosemary Lemon Grilled Chicken

Very good. I used olive oil and a combo of fresh and dry rosemary. I lost way too much of it on the sides and lid of my blender so next time I will make a triple batch of the sauce and freeze it. I didn't have enough to marinate, baste, and use as sauce. Marinated 4 large chik breasts and 3 large red potatoes sliced into rounds for the grill. The potatoes were better than the chicken, in my opinion!

Whole Wheat Beer Bread

I was excited to try a highly rated whole wheat beer bread recipe, since I make regular beer bread frequently. I was disappointed with the flavor of this bread - way too bitter. The texture was terrific, and I plan on altering the recipe to add more sugar or possibly use white instead.

Golden Chocolate Chip Cookies

Delicious! I made the recipe as given, except I used 1 cup of regular flour and 1-1/8 cup whole wheat flour. I also creamed together all ingredients but flour, nuts, and choc chips first, just out of habit. They were so good that I will likely try them next time with all wheat flour.

Grilled Yellow Squash

Delicious! I made some changes - used margarine as I was very low on EVOO. I added a handful of fresh rosemary leaves to the butter/garlic, and that was awesome. Best part - the bits of rosemary left on the squash that give you a zing of flavor! Will def make this again and again!

Peachy Rice Dessert

Delicious!! If you omit the simmer for 10 minutes step, it still turns out ok. I was watching a toddler while cooking and sorta missed that step. I didn't have quite enough peaches so I added about 1/2 a sliced fresh anjou pear to the fruit on top. I did not use sour cream as this was made for a potluck and I didn't want to complicate things - I look forward to trying it again at home WITH the sour cream because it sounds delicious. Great recipe, thanks!!

Excellent!! I added a jar of roasted red peppers and halved the pepperoncinis. Do not substitute chuck roast...the texture is not as good. A staple in our house!

Slow Cooker Cassoulet

This was good, but too salty. I will make again and omit salt entirely. Could not find cannellini beans - used butter beans and they were excellent. Could not find turkey kielbasa so used regular but the low fat kind. Very good with some tweaking, and certainly very easy!

Banana Cranberry Bread

Excellent. I used 1/2 cup margarine instead of shortening, and the whole can of whole cranberry sauce. I agree with the other reviewers that more berries are needed, and next time I will probably reduce the sugar to 2 cups as well.

Beef and Lentil Soup

Yummy! Omitted celery. I used a pound of dry lentils, only because when I measured out 2 cups it only left about 1/3 cup in the bag, and what am I going to do with 1/3 cup dry lentils? Used beef broth. Did not have oregano or cilantro; used thyme and marjoram instead. Next time will probably add more meat, less liquid, and serve more as a stew. Lentils were good, but the meat was outstanding. Will make beer bread next time - seems like this would be a great pairing.

Spicy Rapid Roast Chicken

This was excellent! I doubled recipe and added cooking time, as our chicken was nearly 6lbs. Roasted breast-side down for the first hour, then turned over for an add'l 45 minutes. Couldn't find my oregano so I used thyme instead, and added a dash of garlic powder. Delicious! Drippings would have made great gravy, will do that next time.

Mom's Zucchini Bread

Delicious! Made exactly as written. I was concerned before I added the zucchini because the batter was VERY thick, like cookie dough. But it turned out terrific!
