Crispy Pork Cutlets

I wanted to love this recipe as it sounded delicious. Made exactly as described but it came out extremely bland. Added lots of additional seasoning to sauce after the fact to give it flavor and allow us to eat it. Tonight for the left over pork cutlets I'll be making regular home made gravy using chicken stock.

Salmon Croquette Burgers

Fantastic! I was actually afraid to try canned salmon...remembering from childhood how my Mom picked through it to remove bones and skin. I used the boneless/skinless variety by Bumblebee to make these patties and they were amazing. A little heat from the cayenne made them perfect. They were very flavorful...crispy on the outside and moist on the inside. Will be making these at least once a week to get more seafood into my diet.

Artichoke Chicken

Loved the artichoke topping...but found the chicken breast itself flavorless as the flavor did not permeate the chicken. It would have been better I think if the topping was mixed with cubed or sliced chicken and then baked. I didn't have garlic pepper so I substituted a little garlic powder and fresh ground pepper. Adding just a hint of shredded cheddar 5 minutes before removing from oven is nice as well. I am going to try this topping when baking mild, flaky white fish.

Baked Buffalo Wings

Fantastic! I made these wings last night for the Super Bowl. I made primarily as the recipe stated except I added a little more seasoning to the flour mixture. Then...as another reviewer suggested I baked on a rack in a foil lined cookie sheet at 425 for 20 minutes, flipped the wings and baked for another 20 minutes. Coated with sauce and broiled for 3 minutes, turned and broiled for 3 minutes more. After broiling I coated in sauce again. They came out moist inside, crispy outside and had tons of fantastic flavor. They were devoured by all and made for easy cleanup on a busy day!

Creamy Rice Pudding

Loved it! Perfect! Creamy with tender rice and soft raisins. I used 1/2 2% milk and 1/2 heavy cream and purple raisins as that is what I had on hand. Great warm out of the pan or cold from the fridge.

Creamy Au Gratin Potatoes

I wanted to love this recipe as potatoes and cheese are two of my all time favorite foods. I found it to be a lot of work for the bland and fairly oily result. I made this recipe exactly as stated. Used the food processor for nice thin, even potato slices. It took 2 hours to cook and the oil from the cheese separated and was on top. After stirring the oil mixed back in. I generally make everything from scratch but in this instance I think the Cheesy Potatoes recipe that uses frozen hash brown and cream of chicken soup outrank this recipe by 1000%.

Mexican Rice III

This recipe is fantastic...did not change a thing. Everyone I've made it for loves it and never is even one grain of rice left. I personally like this recipe because it does not have a heavy tomato flavor. You can taste the veggies and seasonings just perfectly and the mild heat from the jalapeno is perfect. I make this to go along with all the Mexican meals I make....and there are a lot of them.

Butternut Squash Soup with a Kick

This soup was amazing! My first time ever having or making butternut squash soup. The only thing I did different was I roasted the squash at 400 for 30 min. after drizzling with a little butter and sprinkling with kosher salt. It warmed the house and created a terrific aroma. After roasting, I boiled with the stock as described in the recipe for 15 min. Friends and family loved it. Thank you for sharing.

Banana Margaritas

Excellent!! I made these for Superbowl and everyone loved them. Even my non-sweet drinking/beer only friend! I did use 4 large bananas and reduced Triple Sec slightly to give them more banana flavor. They were great....creamy and delicious. I may try adding a little banana liqueur next time to see if it makes any difference...but we love them! Thank you!

Pico de Gallo Chicken Quesadillas

This recipe is fantastic!! Best quesadillas we've ever had. Easy to make, tasty. I made them Saturday for the first time for a group of 4 and everyone loved them. All I did different was to add chopped garlic to the pico and used both monterrey jack and cheddar cheese. These were great reheated the next night as well. Served with sour cream, homemade guacamole, mexican rice from this site and banana margaritas later in the evening...a perfect Mexican Fiesta! Also served the pico with chips and that is great too. Thank you for sharing.

Sausage Stuffed Mushrooms II

This recipe was very good!!! They were all gone in minutes at my Halloween part last night. And I even made the mistake of using 1 lb. of sausage instead of the 1/2 lb. called for. I did like the consistency that way. As others suggested I may experiment with adding the stems, garlic and cheddar cheese next time. Also agree with others that they need to be baked for 10 minutes at 400 rather than broiled for 2-3. Fantastic!! Thanks for sharing.

My Best Clam Chowder

Very good...nice, thick and chunky. I used 3 cups of potatoes and omitted carrots. It was a little bland and paste before adding the clams so I added some chicken boullion granules, a dash of hot sauce and black pepper. Did not add vinegar as others suggested. Yummy! Just did a chowder crawl in Portland...and this is as good if not better!

Real N'awlins Muffuletta

Made exactly as per recipe except I only had 6 hours to marinate the ingredients. It was good but I thought the olive salad overpowered the taste of the rest of the sandwich as did the friend who shared it with me.

Red and Green Christmas Jalapeno Jelly

Fantastic!!! Loved the sweet/hot flavor. Tried on crackers with cream cheese...will try as a glaze next. My first experience making any kind of jelly turned out perfect. It set just right. Made 6 jars and sent to some pepper loving friends...they loved it too! My next batch will be changed just the slightest bit....to add 1/4 C. more jalapeno and 1/4 C. less red bell pepper. Thank you!

Canadian Cedar Planked Salmon

Fantastic! I usually tended toward Asian/Teriaki when preparing salmon...but no more!! I prepared just about as the recipe suggested only I added some pressed garlic, finely minced the onion and sprinkled fresh lemon juice on top as others suggested. The fish was flavorful, moist and tender. Just went out and bought another huge filet to have this again!

Jalapeno Chicken II

Absolutely fantasic!! The best chicken recipe I've made in a long time. Used Ken's 3 Cheese Italian Dressing to marinate (3 hours), cut three breasts in half, flattened them to 1/4" thick and then rolled with the cream cheese stuffed pepper. Will be serving for a large pool demolition party this weekend.

Baked Scalloped Potatoes

Fantastic!! Creamy and tasty. I added just a tiny bit of cheddar cheese and chicken boullion granules. So good I made another batch a couple days later! Great the next day too!
