Boston Cream Pie II

This is an old Better Crocker recipe. My family loves it, and I have made it countless times. The cake is very moist, the filling delicious and vanilla, and the glaze very chocolatey! Sometimes I use two egg whites in the cake and reserve the yolks for the filling. Use a large serrated knife to separate the layers.

Blueberry White Chip Muffins

These muffins are good but not great. I omitted the glaze and streudel. I used 1/2 c. brown sugar and 1/4 c. white sugar. Finally, I increased the blueberries to 2 c. and decreased the chips to 1 c. The recipe fully filled 12 regular muffin cups, and they were light and fluffy.

Spicy Bean Salsa

My husband makes this and it is excellent. We omit the tomatoes and use fresh, chopped jalapenos instead of the canned ones. The canned ones tend to add too much spice as it sits.

Banana Bread V

Excellent bread! My husband baked it and it still turned out good! It is very moist and the crust is soft after storing for a day. We didn't have nuts to put in it, but I know that would make it even better! We added 1 tsp vanilla but no cinnamon.

German Apple Cake I

Nice moist cake. I used a little less oil. I also greased and sugared the pan instead of flouring it. This added a little something to the crust since I didn't frost it. It also prevented that ugly white goo on the outside of the cake. I thought the amount of sugar was perfect. This is not my favorite cake, but I will definitely make it again if I have left over apples.

Alfredo Sauce

Libby's® Pumpkin Cheesecake

While I am not a big pumpkin fan, I get requests for this every Thanksgiving and Christmas. The only modification I make is to use pumpkin pie spice instead of the individual spices listed in the recipe. Also, I have not had a problem with the center being soggy. Once the baking time is up, you can turn off the oven but leave the cake in for a little extra time and this may help.

Strawberry Cobbler I

This recipe is very tasty! The filling had a great taste, and it turned nice and pink as the cobbler baked. I did not have the ingredients to make the crust so I made my own quick cobbler crust. Melt 1 stick butter in casserole dish in oven. Combine 1 cup milk, 1 cup self-rising flour, and 1 cup sugar and pour over melted butter. Spoon fruit mixture on top. The crust rises to the top as it bakes.

Chicken Enchiladas I

These enchiladas were good, but not 5 stars. The 10" flour tortillas were too big to fit 8 into my casserole dish. Enchiladas are supposed to be made with corn tortillas anyways. I tried the white sauce that AUTUMNJOY suggested, but I was not pleased with it--too flour-y. Finally, I used a 4 oz can of tomato paste and a can of Rotel tomatoes in the place of the tomato sauce, water, and bell pepper, and the consistency and spice were fine. I will make this again, but I will use a Mexican queso sauce on top instead.

Chewy Peanut Butter Brownies

Mmm. Like a thick, chewy peanut butter cookie. Very good warm and with a big glass of milk. They are also good with chocolate frosting. I used reduced fat creamy peanut butter and light margarine, and the texture was still perfect. Unlike others, I thought the PB flavor was very rich and noticeable. I will definitely make these again when the peanut butter craving hits.

Creamy Chocolate Frosting

This frosting is very good! I made a double batch which filled and frosted a 2-layer 10" cake and 9 cupcakes with a little left over for a few decorations. I did add a bit more cocoa for personal preference and used half-and-half instead of evaporated milk because that's what I had on hand. Thanks!

Tropical Island Tea

This recipe was okay. I could taste the instant tea pretty strongly, but others liked it and did not have a problem with the taste. Next time, I will brew tea instead of using instant. At my luau, it definitely was not preferred over the pina colada punch recipe from this site.

Pineapple Mandarin Cake

Very simple to make. I also garnished the base of the cake with fresh pineapple chunks and maraschino cherries. I kept it in the fridge because of the fruit. Very nice presentation.
