Burrito Pie

I followed the recipe with the only exception being I used mild enchilada sauce rather than taco sauce as that's what I had in the pantry. This was delicious and the family loved it. I served it with sour cream, additional black olives and sliced green onions. Next time I may use less refried beans as they are not my family's favorite. This makes a lot and goes a long way. Will definitely make again!

Slow Cooker Chicken and Dumplings

This was just gross. I followed the recipe. Yes, one cannot find an easier recipe for chicken and dumplings. Before I served my family, I attempted to add seasonings to make it taste like something other than shredded chicken and cream of chicken soup. Didn't help. The 'dumplings' essentially disintegrated after an hour. Shredded chicken on a plate....yum. :(

Hobo Beef and Vegetable Soup

I would give this 3 1/2 stars if possible. It was good but as others said, it does lack something. I took suggestions such as adding additional onion, garlic, Worcestershire sauce, celery salt, beef bouillon but it still missed something. I also used frozen veggies as I cannot tolerate canned. What I may do next time is to serve it very thick and spoon over mashed potatoes kind of a Shepherd's pie dish. It is very hardy though but once I tweak it to figure out that little extra that's needed, it will be a keeper for sure!

Reuben Dip

Based on other reviews, I did not rinse the saurkraut but drained and pressed out the liquid. I also added one package of cream cheese, low fat thousand island dressing, 1/2 cup sour cream and omitted the mayo. I used high quality corned beef from the deli and used a touch over a pound. No issues with grease for me. I also used half swiss cheese and half mozzarella. I mixed it all and poured into a crockpot until hot and bubbly. Served it with cocktail rye bread and Triscuit rye crackers. This was delicious! I took it to a super bowl party and everyone commented on how good it was and was quickly gone! Will definitely make again.

Slow Cooker Sausage with Sauce

Based on other reviews I browned the sausage first and poked holes to allow some of the grease to drain. I added additional onion and two cloves of garlic. I didn't find the dish greasy at all. I served in hoagie rolls topped with cheese. Family loved it! Will definitely make again.

Slow Cooker Buffalo Chicken Sandwiches

My family loves buffalo chicken strips so I had to try this. Although I don't like buffalo sauce myself this was good. With the dry ranch mix it seemed a bit salty so I'm not sure if bottled would be better? Overall an easy crockpot meal!

Easy Slow Cooker French Dip

Sadly, I was disappointed. I followed the recipe initially but found there was real lack of flavor. I ended up adding garlic, salt, pepper, thyme and bay leaf. The broth just didn't pack enough punch. It needed more depth perhaps using beef consomme would have been better? The beef itself was bland. I added salt to the beef once it was on the bun. I toasted the buns which was nice and melted provolone as well. My family always comments on new recipes but no one said anything about this; nothing. I won't be making this again.

Chicken and Biscuit Casserole

Overall this turned out really good. My family liked it and went back for seconds. Changes I made: omitted the sugar, swapped thyme for the basil (personal preference), and used refrigerated biscuits. When the gravy was done, it wasn't as thick as I would like so I used a bit of corn starch to thicken it up before pouring it into the casserole dish. I will definitely make this again.

Quinoa and Black Beans

This is so good! Using advice from others, I rinsed the quinoa and let it soak for ten minutes. I used one can of black beans and added half of a red bell pepper. I waited for it to cool a bit before I added the cilantro so it wouldn't wilt. I also used vegetable broth and felt it had more than enough flavor. The colors were beautiful and the spices perfect. It's good both warm and cold. I will make this again and look forward to different variations perhaps adding halved cherry tomatoes or sun-dried tomatoes! Lot's of options!
