Turkey Pot Pie I

This was really good! I used my own turkey stock and used frozen mixed veg (broc, cauli and carrots). I also took the suggestion of another reviewer and used a can of cream of chicken soup and I used half and half instead of milk, and was able to forego the flour/roux sauce since it was think, saucy, and creamy. This also made it possible to make it all in one pan. I added all the liquids at once, threw in the potatoes and frozen veg, and when they were cooked, added the turkey. Yum! This will now be a Boxing Day tradition!

Creamy White Wine Sauce

Okay, so this sauce has just changed my life. How can a sauce do that, you ask? By taking a dish I've made for YEARS and turning it into the most scrumptious meal my family has had in a long while. Garlic mushrooms are a dinner staple, ie, fresh garlic, butter, sea salt, fresh pepper, and fresh mushrooms cooked in the oven for about 40 mins.... tonight I COMBINED the cooked mushrooms with the white wine sauce (plus fresh parsley but no salt). It was sooo amazing... poured over some simple sauteed chicken breasts... sigh. DELISH. This simple sauce recipe is just sitting here, waiting for each chef to come along and make it their own. I will be adding sauteed onions and serving over fish, or broccoli and over pasta... or with chocolate over cake... okay maybe not the last one, but you get the idea... it's a great recipe to add to your arsenal of yummy tricks. Yep. Life changed.

Yummy Honey Chicken Kabobs

'Tasty moist succulent smoky flavour' husband said and I quote... I added in Ground Ginger, Garlic Salt, and a combination of other herbs and spices (McCormick Chicken Rub) and marinated for about 5 hours. I didn't put the peppers or onions in the marinade, but just brushed some of the reserve basting liquid on those skewers when on the grill. When husband and 13 year old son fight over the chicken, you know it's good....

Sweet and Sour Chicken I

I am rating this a three with the caveat that perhaps I made a mistake somewhere along the way. The only thing I did differently was use egg beaters, instead of real egg in the batter. So maybe that made a huge difference. It was all going well until I put it in the wok, and at that stage the batter was a bit of a sloppy sticky goopy mess. I am going to try it again and add the chicken pieces a few at a time. Because when you put it all in, it was just a crumbly mess. The taste was actually okay afterwards, but the look was not good!

Zesty Chicken Meatloaf

Really good flavours. The leftovers tasted even better. A great easy, weeknight meal. I used ground turkey, and for breadcrumbs just foodprocessed two pieces of toast. My 11 year old has declared it a keeper!

This was a good light salad. I prepared it exactly as the recipe stated, and added a package of prepared grilled chicken to make it a dinner. The dressing was tasty.

Broiled Tilapia Parmesan

Okay... this is soo unexplainably delicious. So simple, so tasty... it honestly left me speechless. I was kind of skeptical (mayo??), and was even a bit worried when I mixed the toppings, because it looked quite dodgy... It came out of the oven smelling delicious, and the crispy edges... sooo good. This is the kind of dish that makes you want to have people over, just so you can show them what a chef you are.
