This was fantastic! Scaled it down for two people and omitted the bananas as I read reviews beforehand. Otherwise followed recipe and I will definitely be making this again.

Roxie's Bran Muffins

Made this recipe for the first time this week and was pleasantly surprised with the results. This has to be THE best bran muffin recipe I have ever tried and or made. It is very moist (I am not joking!) which I have found is not always the case with bran muffins, so I was very pleased with the moisture in this muffins. Flavour was spot on as well! left the peel on the apple and used my food processor to shred it, and I did not change a single ingredient

Delicious Ham and Potato Soup

I agree with 5 stars for this easy to make, delicious soup. I didn't change a thing and it turned out creamy and perfect. Even my picky 11 year old ate it without a complaint!

Fudge Truffle Cheesecake from EAGLE BRAND®

This was a fantastic cheesecake! I made one change and only because I had a substitute ingredient on hand instead of what was called for. I used chocolate cookie crumbs instead of graham crumbs and it was perfect. I baked it for the suggested time and then shut the oven off and let it sit in the oven for about 5 hours, took it out and tossed it in the fridge for 24 hours and served it for Easter dinner dessert. It was easy to make and very rich!

Healthier Creamy Rice Pudding

I made this rice pudding while waiting for my dinner to cook, that's how quick and easy it is. I did not have brown rice so I used jasmine and it still turned out great. Other then the rice I did not substitute or change the recipe at all but I found the cooking times to be a lot less than the recipe stated which could just be due to my stove top temp. I have eaten it warm and cold and I love it both ways! Definitely a keeper :)

Beth's Spicy Oatmeal Raisin Cookies

These cookies are so good I cannot stop eating them! I read reviews and did some tweaking...I used 1 cup of butter as I did not have the butter flavoured shortening. I omitted the white sugar all together and added 1/4 tsp of nutmeg. I soaked my raisins in boiling water as I prepped everything and this made them plump and soft. I used my medium size scoop for the dough and flattened them slightly. I baked them for the full 12 minutes as they were thick and they are amazingly moist! Honestly this is the best oatmeal raisin cookie I have ever had and I am trying really hard to leave some for the rest of the family!

Greek Salad, The Best!

Loved this! I made it in the morning, put it in the fridge, and served it tonight. I followed the ingredients to the letter except for halving everything as it would have been too much for what I needed. This is definitely a keeper in my books!

Baked Macaroni and Cheese I

This recipe, in my opinion, is 5 stars. And yes, I did alter it slightly, as I have to admit, I tend to do that based on my families preferences. I increased the pasta to 12oz, fried 6 pieces of bacon and then caramelized my onions in the bacon pan. I used all three cups of cheeses in my sauce and even added a little extra to the top before baking. Now here is where I really deviated! I took the spices from Chef Jonh's Mac and Cheese (from this site) and added them to my sauce. I also used his Panko topping as I prefer my Mac and cheese to have a crunchy topping. The reason why I love this site is not only for the recipes but because of the reviews! Countless times in the past (from cookbooks) I have made recipes that never turned out....I have made dozens of recipes from this site and I can honestly say that there was only one that wasn't a hit, it was good, but not a 'wow I would make that again'. And the reason for my success (other than my stellar cooking/baking skills ;) is because I read the recipes over and then the reviews to see what has worked countless times for everyone. I see nothing wrong with altering a recipe as I believe that is what cooking/baking is all about! If it wasn't for the recipe submitter playing around with recipes, it wouldn't be here for us to enjoy. :)

Iced Mochas

Yummy!! I have made this recipe several times, first time without freezing the coffee into cubes and although it was good, it wasn't the 'WOW this is really good!'. So the next time I froze the coffee into cubes and oh my goodness this was sooo good! Highly recommend taking the time to do this step as it makes a huge difference. I have made this many times now as I freeze all leftover coffee and keep a ziplock freezer bag of cubes in my freezer just for this recipe. I have added caramel, chocolate and Rolo syrup and it is amazing!

Best Ever Caramel Apple Crisp

Made this dish tonight and it turned out wonderful! I used chopped frozen apples that I had in the freezer so I omitted the water from the recipe. And it was a good thing I didn't add the water because I accidentally added the whole can of evaporated milk (instead of the 5oz it called for!) but it still turned out perfect! Other than that mistake, I followed the recipe to the letter and everyone loved it! It was served warm with ice cream.

Chocolate Cake II

What a wonderful cake! This cake was easy to mix together, moist and not overpowering. I did however mix all my dry ingredients together and then all my wet ingredients (minus the coffee) and then blended them together. I made sure the coffee was good and hot and mixed it in very well once all my ingredients were blended nicely. To make it 'lighter' I halved the sugar and used unsweetened apple sauce in place of the oil and it still turned out moist and delicious. The house smelled so good while this was baking! I used the Special Buttercream Icing from this site and cut the cake into small squares, piped the icing on (tinted pink for Valentines Day) and placed a red gummy heart in the middle of the icing. Definitely a keeper for a quick hassle free cake.

Special Buttercream Frosting

This was my first attempt at buttercream icing so I made this last night to icing two dozen cupcakes (Strawberry Cake from this site) and the Chocolate Cake II from this site. To be honest I was skeptical in regards to using shortening as I thought the taste would be off but I was pleasantly surprised. My son does not like cream cheese icing so I decided to give this one a whirl and he loved it! Other than halve the ingredients (as I read all the reviews that said it makes tons) I did not change a thing and it was an easy recipe, great for piping, and great tasting. I will be making this one again and I think I may take some reviewers suggestions and use half butter/half shortening to see how it changes the flavour.

Marinated Pork Tenderloin

Made this on a whim for dinner and was very pleased. I did not modify the ingredients, I made it exactly as stated and the flavour was wonderful. I baked it in the oven with all the marinade in the pan, added a thickener to the juices in the pan once it was cooked and poured it over my rice, yummy!

Pumpkin Ginger Cupcakes

All I can say is....amazing! I read the reviews, halved the sugars, and replaced half the butter with applesauce and boy was I happy with the results. One reviewer said not to icing them, this is so true. These are wonderful all on their own. I took these to work and they were gobbled up in no time. I was lucky to get one!

Smokin' Scovilles Turkey Chili

This is my new 'go to' chili recipe. My 11 year old picky eater even liked it! The only change I made was to omit the hot peppers and half the 'hot' spices as we don't all like heat in our food in this house. I still added all the spices, I just tempered it to suit all taste buds. I loved the addition of liquid smoke and beer, in my opinion it made this recipe.

Sweet, Sticky and Spicy Chicken

Made this recipe last night and we loved it. Took the advice of the many reviews I read and dredged the chicken in flour first before cooking. I halved the hot sauce as we are not huge hot sauce lovers....should have used 1 tsp in total of the hot sauce as we are whimps in the hot sauce department! Still loved it even though my mouth was on fire :). Sauce thickened nicely as I added a touch of sweet chilli sauce for chicken while it was cooking (advice from another review). Served it on a bed of rice and it was wonderful.

Frosted Banana Bars

This cake was amazing!! It is probably the most moist cake I have ever tried. I read all the reviews and decided to cut the sugar in half and the cake is still perfect. I also made my own icing using 1/4 cup of butter, 1 tsp vanilla, 4oz cream cheese and 2 cups icing sugar. I baked the cake, let it cool, put it in the fridge (advice from another review) to firm up and then I put the icing on. Everyone at work is getting a new treat tomorrow :) I had to edit this after taking this in to work....it is worthy of more than five stars!

Cookie Balls

Every year I like to try new recipes for Christmas and out of all the new ones I tried, this one was by far my favourite this year. I read the reviews beforehand and used the suggestions of freezing the dough before dipping and it worked great. Try to eat these right out of the freezer....you won't be disappointed!!
