Fudge Puddles

Where has this recipe been all my life? I did not use mini tins but full-sized and they turned out perfect. I think that by using the bigger tin size you are less likely to have leftover icing. I didn't. The cookie came out perfectly from the tin also. Use a thin, pointed tip of a knife and slide it down at 3 different spots and they come right out. I think putting pecans on top is not necessary.

Indian Salad

I used basmati rice and sour cream (and added less lemon juice as a result) instead of heavy cream and this was really tasty. I definitely recommend fresh or frozen asparagus as opposed to canned. If you can't get it then substitute another fresh veggie like green beans or zucchini/yellow squash, etc. I love pretty much anything Indian inspired but I'd never thought to add a creamy dressing to my rice before.

No-Cream Pasta Primavera

This was extraordinarily good! I didn't have zucchini or asparagus so I just used more yellow squash, and didn't have fresh tomatoes so I used a can of diced-then-drained which I added last to the sauteed onion and garlic to warm them up. To the veggies I added a dash of red pepper flakes which I always do. This is, without a doubt, one of the tastiest dishes I've ever eaten. Yummy.

Paprika Pork Chops

This recipe didn't sound overwhelming, but the reviews convinced me to try it and IT WAS DELICIOUS. The only thing I tweaked was the garlic salt. I loathe the strong salt flavor of garlic salt, so I used garlic powder instead. I'm already pondering what other foods I could put the sour cream mixture on...

Rhubarb Sour Cream Pie

This was delicious. I used 1 cup of sugar instead of a cup and a half, and sprinkled a little cinnamon on the top for a little holiday flavor. I used 3 cups of frozen rhubarb (before thawing) and added some halved black cherries since I had them on hand and it turned out perfect. YUM!

Hot Artichoke Dip

This is the king of all artichoke dip recipes. I've tried a few versions out there and none come remotely close to this one. This recipe doesn't need any tweaking at all--it's perfect! The tart artichoke with the rich mayo & cheese = heaven. I make this at any and every holiday and serve with toasted baguette slices. YUM!

Santa's Favorite Cake

This cake was great, although I cheated and used a chocolate cake mix and prepared according to those instructions. I halved the icing recipe and sprinkled crushed puffed peppermint candy over the top of the frosted cake. It was a hit!

Broiled Tilapia Parmesan

Perfect recipe for such a mild and delicate fish. My fillets were very small, so I only needed to broil once for about 5 minutes with the topping. Used Old Bay in place of celery salt, and added some parsley. Very tasty!

Easy Rum Cake

Very tasty cake. I omitted the nuts and used half the oil and it turned out great. Very moist and tender. Mine was done in 50 minutes. Yum!
