Amazing Crab Shells

Made these for a large party and they went largely untouched. Have to agree with others who said the shells add nothing, they really don't. The mixture itself is decent, would be worthy served as a dip. But the taste I really came away with was onion and cream cheese. The seafood almost disappears completely.

Spicy Rapid Roast Chicken

My chicken came out perfectly. It was a slightly larger chicken, so it took about 30 more minutes than the listed time, but it came out juicy and golden brown. Took the internal temp at the thigh and it was perfect throughout. Thanks!

Baked Corn I

I've made this twice, once with a cup of butter and once with a 1/2 cup. I prefer the 1/2 cup, but it turns out more like a plain old cornbread with corn in it. With a whole cup it just reeks of butter to me. Overall I thought it was decent, and a large gathering of family at Thanksgiving most all seemed to give it positive reviews. So if you like it keep it, but don't expect everyone to go for it.

Cranberry Salad III

I was a little surprised at how this tasted. IT is a beautiful side dish, put it in a clear container for everyone to see. Unfortunately, it just doesn't taste as good as it looks. The pecans to me seem out of place, I think it would have been better without it. And it has a very strong, pineapple-like taste. Persons liking traditional cranberry sauce probably should avoid as this is very different. Everybody jumped all over this because of the appearance, then didn't finish what they got. Also it was very hard to spread the creamcheese/pecan mixture over the first layer of jello, came out very lumpy and uneven. I may try again without the pecans. Does look very festive though.

Upside Down Pumpkin Cake

This is excellent. I made a test run before Thanksgiving, and then made it again for Thanksgiving. It smells fabulous cooking, and tastes even better. The cake and nuts at the bottom is the best. I've given this to about 30 people and everybody has loved it. Better than pumpkin pie by a landslide. Make sure you let it cool fully before flipping, and then smooth out the bumps with a rubber spatula. Only possible complaint is that it isn't the prettiest thing in the world, but with whip cream on top you can't tell anyway.

Homestyle Turkey, the Michigander Way

My first turkey. Came out juicy, and a beautiful brown skin. The meat was so tender the wings fell off when it was lifted out of the roasting pan. Use a very large roasting pan, because lots of liquids are involved here and will spill over smoking up the kitchen if you aren't careful. Perfect otherwise.
