Homemade Black Bean Veggie Burgers

AWESOME veggie burgers! I am definitely going to make this recipe over and over again. The mix was a bit too loose and moist to form into patties, so I added more breadcrumbs as well as some grated parmesan cheese to firm the mixture up. I used real bread crumbs (i.e. bread that I processed into crumbs) to make them extra good. I also dredged them in flour and then fried them in a little olive oil and this gave them a nice, crispy exterior which added to the flavor.

Pumpkin Bread IV

This recipe is scrumptious! The only changes I made were to increase all of the spices a little and I made them into muffins instead of loaves. It took 24 minutes to bake the muffins (regular sized, not jumbo). I will definitely make this recipe again. Thanks for sharing!

Chicken Stew With Coconut Milk

I made a vegetarian version of this dish by substituting canned seitan (which is a meat substitute made from wheat gluten that has the texture and flavor of chicken) for the chicken. I also substituted canned white beans for the lima beans (since I hate lima beans), and added 1/3 cup white flour to thicken the sauce...I also cooked it in the slow cooker. I first fried the seitan in a little oil, the fried the veggies for a bit and stirred in the flour, spices and coconut milk to thicken a little before tossing into the slow cooker for 4 hours. I served over rice and it was delish! I don't normally go crazy altering recipes, but since I wanted to do a slow cooker vegetarian version, I had to make a few changes, but the overall flavors were the same. This dish is mildly spicy and very tasty. I will definitely make it again.

Satiny Chocolate Glaze

I used this glaze on the "Too Much Chocolate Cake" recipe on this site and it was the bomb!! What a fantastic combination! This glaze is rich and thick and very chocolatey. Delicious!

Too Much Chocolate Cake

This is one of the most delicious chocolate cakes EVER. Very, very moist, rich and intensely chocolate. If you are a chocoholic (like me), you will love it. And even though it uses a boxed mix, it tastes like it's made from scratch. Thanks for sharing this wonderful recipe!

Apple Pie by Grandma Ople

This pie is outrageously good, possibly the best apple pie I have ever eaten. I think it's the fact that the apples are coated in buttery syrup that sets it apart from other apple pie recipes. What doesn't taste better with lots of butter? :) I did make some minor changes, as per suggestions in other reviews. I added 1 tsp cinnamon, a dash of nutmeg and 1tbs of vanilla (replacing 1 tbs of the water) to the syrup before boiling. Also, I saved a little of the syrup to brush the top of the crust and this made the crust nice and dark golden brown. I didn't do a lattice. I just did a regular full pie crust top and cut 4 slits/vents into it. I baked the pie at 350 the entire time so as not to overcook the crust. I did have to bake a little longer than the instructions because of this. I tested the tenderness of the apples by sticking a knife in the vents and into the apples. All in all, a WONDERFUL pie. Thanks to Moshasmama for sharing it with all of us.

Blueberry Cheesecake Ice Cream

This ice cream is out of this world. I made it for a family gathering and everyone went nuts over it. It does taste just like the premium ice cream you might find in a gourmet ice cream shop, or maybe something Ben & Jerry's would put out. I used frozen strawberries (which I sliced) instead of blueberries and it was outrageous. Very sweet and creamy and it did taste a lot like strawberry cheesecake. The recipe is a little confusing because it doesn't say what to do with the extra ice cream mix that is left after you fill the ice cream freezer 2/3 full. Do you use it later as part of this recipe? Do you use it for another batch? I read the recipe several times and was not sure, so I decided it must be extra to make another batch, so that is what I will do. Also, this amount of graham cracker mixture is (in my opinion) way too much. I used about half of it, and it still seemed like a lot (the graham cracker mixture has the potential to overpower the flavor of the ice cream if you use too much of it.) I think you can safely HALF the amounts for the graham cracker mixture and you will have plenty.

Eggplant Croquettes

These are outstanding! My new favorite veggie burger recipe. Some changes I made: I added more bread crumbs because the mix was a bit too loose/moist. I dredged the burgers in flour before frying to give them a nice crust. I also used WAY less oil....about 2 tbs in a large skillet. I used a 50/50 mix of olive oil and chili oil (Asian oil) which gave them a little bit of a kick. DELICIOUS!!!

Chai Tea Mix

This is a super delicious recipe and tastes just like Trader Joe's Chai Mix, but unfortunately, it's very high in sugar and chemicals (in the non-dairy creamers). The first time I made it, I followed the recipe exactly. The second time, I decided to create a healthier (but just as tasty) version. For the mix: 3 cups of powdered milk, and all the spices listed in the recipe. That's it. Then, to make a cup of chai tea: Make a regular cup of hot tea with a tea bag (not instant tea) and let it steep for a couple minutes. Stir in enough of the powdered mix to taste. Add liquid Stevia to sweeten, and a little splash of vanilla. Voila! Just as tasty, but all natural and low calorie too!

Jamie's Cranberry Spinach Salad

This salad is outrageously good. I used regular mixed greens instead of spinach, because that's what we had on hand, and it was great. I sprinkled candied nuts over top and that really set it off! (See Bea's recipe for "Pecan Snack"). Be aware that the vinaigrette for this recipe is very sweet. I happen to love it, but somebody who doesn't love sweet dressings may be put off.

Double Tomato Bruschetta

This is the BEST bruschetta I have ever tasted! I have ordered bruschetta many times in restaurants and this recipe beats them all. The topping is so moist, flavorful and succulent. It was a big hit at our New Years Eve party. I made some slight "tweakings" to make it better. First, I used my bread machine to make homemade bread (I used the dough setting and then shaped the dough into a long, thin baguette and baked in the oven). I also marinated the topping for a few hours instead of 10 minutes as directed. Finally, I brushed the bread slices with a little olive oil before broiling for extra flavor and texture. Otherwise, I did not change the essential recipe. This recipe is one of my new favorites and I know I will make it again and again.

To Die For Blueberry Muffins

These are the most delicious blueberry muffins I have ever tasted!!! It's like eating blueberry crumb cake. The crumb topping makes this recipe, but the cake itself is so good too - very moist and just the right sweetness. You must try this recipe!

Old Fashioned Onion Rings

These are outstanding!!! Just like the best onion rings you get in restaurants. For the breadcrumbs, I used a mixture of real bread crumbs (simply rip up some real bread and process in a food processor) mixed with some panko crumbs to give them extra crunch. I also used a mix of vegetable and peanut oils - I love the flavor peanut oil imparts to fried foods. EXCELLENT recipe.

Pecan Snack

These are OUTRAGEOUSLY good. I used walnuts, since that's what we had in the house, and they were great. They are delicious sprinkled over a salad of greens, sliced pears and dried cranberries with a citrus vinaigrette. I couldn't stop eating these.
